Brandy Old Time

The “Old Time” series is a collaboration with The Charleston Beer Exchange. The base beer (a Belgian-style strong dark ale) for all four Old Times was originally brewed in July 2011, then aged in a variety of oak barrels, some with and some without a blend of brettanomyces, lactobacillus, and pediococcus. Brandy Old Time was aged for 18 months in three Laird’s apple brandy barrels without any wild yeast/brewing bacteria.

A complex and vinous medium-bodied brew that combines the tangy sweet-tart fruitiness of a fine balsamic vinegar with the brooding musty earthiness of a Bordeaux. This special brew was created by aging our 9% ABV Jackhammer Old for a year in a Gueuze-inoculated oak cask and then bottle conditioning for another year before serving.
