We like to take classic styles and add our own bold twist. It may be unconventional but that’s just how we like to do things. Our Amber Lager stands great along but proves to be an exceptional base for our intrepid experimentations. Spices play wonderfully with this malty brew and barrel aging it took it to a whole new level.

Dressed in black much like it’s namesake, Bullet Tooth Tony, our first rum barrel aged Russian Imperial Stout is smooth yet sturdy, and means business. Chinook and Mount Hood hops provide a bitter backbone for this chocolate malt driven heavy hitter. Finishing dry, with deeply complex notes of roast, dark fruit and baker’s chocolate, Bullet Tooth will warm you like the blood that runs through your veins. There are two types of stouts: big, brave ones like ours, and the little mincey, wimpy stouts you usually find standing on either side of you, which may as well be… replicas.

A light colored, exceptionally well balanced smooth ale with a light fragrant hop finish. Bronze award winner at the CAMRA Great British Beer Festival 2000.

German Gosebier with Malted Sunflowers Gose (goze-uh) is a beer originating in northern Germany, in Goslar and Leipzig. Typically brewed with at least 50% malted wheat, it features a tart, citrusy acidity and is flavored with salt and coriander. CBC’s take on this classic style includes the use of sunflower seeds, which were germinated and roasted for us by our friends Andrea and Christian at Valley Malt in Hadley!

Brewed with local oysters from Jeff Spahr at localoysters.com! Smooth and Roasty, briny (minerally and salty!??) that can only be attributed to the oysters.

Exuberant pine and citrus notes frame this American IPA's balanced body, clean flavors and precise finish. Like all IPA's, this one is substantially bitter.

A smooth, pale golden belgian with a light malty flavor characterized by fruity esters.

Brewed with fresh harvested spring honey stolen from some very angry bees (we have the welts to prove it) and infused with fresh blueberries. Creating a light, refreshing ale with a nice blueberry aroma, crackery malt flavors, a hint of sweetness and a refreshing blueberry finish.

New for 2011, this beer is brewed in the Cascadian Dark Ale style. The array of dark malts present a full bodied beer with notes of cocoa and slight roast. This CDA has a big floral citrus hop flavor and bitterness, reminiscent of an IPA.
