Carnivore No. 1 English Mild

Rise and shine craft beer and breakfast lovers! Our fearless Brewmaster and amateur lion tamer went whole hog with the recipe for Carnivore No. 1! This is a brave take on an English Mild: a hint of maple syrup and bacon. But fear not! This dark beer does not bite. The bacon and maple syrup flavors work well together and culminate with a pleasing malty finish. Sure Carnivore No. 1 is daring to make, but at a mere 3.5% ABV you can easily drink a couple of these critters and not worry about getting lost in the jungle…so to speak.

Carob Stout

Carob Stout is a big bodied stout that receives its distinguishable flavor characteristics from the substantial use of roasted malt, dark specialty grains and ground carob. Cocoa and chocolate-like aromas penetrate from the black depths of this alluring ale. Robust flavors of roasted black coffee mix with the abundant, rich chocolate qualities. As it warms, an ample bitterness from the dark roasted specialty grains and high alpha hops intensifies. The finish is dry on the palate.

Carol's 2 Obsessions Coffee Pale Ale

Pale Ale. Coffee. Anyone who knows Carol knows that one of these two beverages answers the question “What are you in the mood to drink?” A complex beer with a beautiful orange hue, you’ll be able to spend some time analyzing this one. The next in the Linsey’s Lab series, two coffees were added to the pale base: Ethiopian Baaroo, roasted by Peritus Coffee, and Yrgsheffee Gedeo (also Ethiopian), roasted by The Bean Cycle. Both coffees are dry processed, meaning the fruit is allowed to dry on the seed before the pulp is removed, resulting in some interesting fruit flavors in addition to customary dark coffee notes. This is borne out in the beer: delicate coffee aroma melds with tropical, berry and citrus fruits. Hops were chosen to complement these fruity flavors, and malts balance coffee notes on the finish, lending to a residual sweetness. A beer that changes markedly as it warms slightly, we recommend you try your first half cold and then allow it to warm a bit to compare.

Gouden Carolus Indulgence [Indulgence, noun, \in-'dәl-jәn(t)s\ something that is done or enjoyed as a special pleasure] is a limited series of beers brewed every year with varying content. These ‘Indulgence’ brews are exclusive delights to be savoured at special moments or shared with special people. Cuvée Sauvage is the 2nd taste to be produced under this label. Gouden Carolus Cuvée van de Keizer Rood was blended with 2- and 3-year-old Lambic (20%) from the Boon Brewery (Lembeek). This union combines the best of two brewing traditions: full-bodied and subtly flavoured, fruity and refreshingly sour.

CAROUSEL RIDE

When it seems nearly impossible to convince ourselves that the grey skies, dirt-colored snow, and salt covered roads do in fact disappear, sometimes a gentle reminder of Summer is all we need while recovering from wind burn. Thanks to our favorite strain of Belgian yeast and a light addition of Sorachi Ace hops, this beer is that reminder. Reminiscent of frozen banana pops, lemon slushies, and cucumber sandwiches, Carousel Ride is more fun than your favorite carnival attraction.

Carrabassett Summer Ale

The Carrabassett Summer ale joined our stable of beers in April, 2003. This Kolsh beer will delight and refresh you. We use a high proportion of wheat malt to give it a thick head and light body. The Carrabassett Summer Ale makes a great addition to all things summer: BBQs, tunes from a speaker in the window, frisbees and the sound of crickets. Not a bad way to spend an evening.
