Cascara – Saison with Dried Coffee Fruit

The second collaboration with our friends at WoodBurl Coffee Roasters, this Belgian Saison brewed with Cascara (dried coffee fruit) is hazy, gold in color with light orange highlights. The addition of Jarrylo hops during the boil provides some citrusy-orange notes and a bit of spiciness. The malt character is light and crisp. Finishes very dry. Additional highlights: Made with a special Franco-Belgian farmhouse yeast blend that provides a mild tartness to the finish. Also used Cascara (Cascara is the dried fruit from the coffee ëcherryí, the seed of which is the coffee ëbeaní) which imparts a mild spice quality that is reminiscent of green pepper to the flavor and aroma.

Cashmere Hammer

We really enjoy brewing with rye. It has a dry, spicy characteristic that plays very well with other flavors. In many styles of beer, a touch of rye can be used to bring balance to an otherwise one-directional taste. For this beer, though, we started with the rye and piled it on, ensuring it would play first fiddle. The rest of the ingredients - the base, dark, and caramel malts, along with the Czech Saaz hops - were selected for their ability to highlight the rye and play off of its boldness. Since large quantities of rye can sometimes yield an unpalatable harshness, the finishing touch on this brew was to nitrogenate rather than carbonate. The creaminess of the nitrogen pour smoothes the edge, making for very gentle, yet full-bodied beer. We hope you enjoy.

Notch's Cask only series celebrates the roots of session beer, and first up in the series is Notch Dark Mild. While the British Mild has evolved over the centuries, it was the session beer of choice for the 20th century British coal miner. Notch’s Dark Mild pays homage to this worker’s beer – a very dark ruby brown appearance, malty and fruity aroma, a caramel maltiness with very low hop bitterness, and only 3.7% ABV.

Cask Series #3 - Black Bitter

It's a strange yet intriguing little beer. Wholly British in every way, yet certainly lacking in any British tradition (to our knowledge, anyway). Think hoppy mild, or dark hoppy bitter. It is certainly not American in any way, as the British hops, malts and yeast dominate this beer, as does the dry finish from sulfate rich brewing water. We almost called this beer Oxymoron (aka Session Black IPA).

Cask Series #4 - Coffee Milk Stout

Fourth up in the cask only series is a collaboration beer with Drink Craft Beer! This cask only beer is based on the idea of the Breakfast Stout, where a few in the AM won't curtail your activities the remainder of the day. A British Milk Stout serves as the base recipe, where a significant portion of oats and milk sugar provide a creamy sweetness. The beer is then blended in the cask with a lightly roasted, fruity Colombian coffee. The result is an extremely smooth, mellow stout with only a light roast from the coffee and barley. A real day drinker!

Cask Series #5 - English Dream

Our love of cask ale was born of the British Bitter, and here we have a Yorkshire influence Best Bitter hopped with only East Kent Goldings. The EKG is a classic hop that is struggling to find brewers to use them, a result of the “fruitification” of hop varieties in the last decade. The ingredients are all Brit – Fawcett Golden Promise Malt, East Kent Goldings, Yorkshire ale yeast, and moderately hard water - and provides an aroma and flavor missing from today's heavy handed US cask ales.

Light amber in color with berry, pink grapefruit, and lychee in the aroma. Called a "benchmark Northwest IPA" by the Tacoma Brews Tribune Blog. Heavily hopped, but well balanced. Hops include Amarillo, Centennial, and Simcoe. Rotating dry hop! Check with your bartender to find out what the most recent hops are. Currently, this is Columbus and Mosaic.
