Black as the night sky, our imperial porter is brewed from a blend of premium dark malts chosen for their complex caramel/chocolately/fruity qualities. Cool-fermented with a clean Scotch ale yeast that emphasizes malty richness and earthy, mossy aromatics — think of Cassiopeia as a Baltic Porter fermented like a Wee Heavy. This velvety, warming ale is surprisingly well attenuated, light on the palate and digestible.

Castor (Extra Pale Ale)

The second brightest star in the constellation Gemini was the inspiration for this deliciously hoppy beer. Castor follows the same recipe as Pollux, differing only in the hops used. A new experimental Michigan hop was used in brewing, delivering notes of lemon meringue, to nicely complement the bready, toasted malt character throughout the brew. The ABV exists somewhere in between a Pale Ale and an IPA, hence the name “Extra Pale.” With a color reminiscent of an April sunset, this beer gives us something to look forward to in the later months of winter.

This pungent IPA recipe was like a phoenix that rose from the ashes of hop politics. Faced with a serious shortage of Citra in early fall (2013), we had to put the production of Roman Candle momentarily on hold. In its absence, and to mend our broken hearts, we devised a recipe that was all about utilizing the pungent citrusy kick of two hops we call favourites here: Summit and Simcoe. The malt body is extremely light, which allows the focus to stay on the hops, both in aroma and bitterness. The final product took us a bit by surprise: it wasn't just a runner up, but a hoppy sensation that would prove to give Roman serious competition. You decide which IPA reigns supreme.
