This lovely wheat beer is made in the time-honoured way of infusing fruit into the beer during aging to allow the Belgian yeast a secondary fermentation. This results in a refreshingly dry beer with a light “black current” flavour with a slightly cloudy pink colour. Summer in a glass!

We've taken our IPA and amped it to dizzying heights with more malty goodness and Cascade hops.

Sitting around the kitchen during our start-up days, the need for a sessionable beer became clear. Our first intern actually came up with the idea to brew a cream ale, so we started designing the recipe. This is our version of a cream ale. Deep gold in color, it has a soft malty aroma, slightly sweet creamy texture with a balanced bitterness, while finishing smooth and clean.

Launched at the Robin Hood Beer & Cider Festival 2014, Red Riding Hood is the newest beer in Castle Rock’s core range of beers. A reddish-brown colour, Red Riding Hood bridges the gap between the most traditional of best bitters, and the fruity red ales from the US and beyond. Red Riding Hood is brewed with El Dorado (USA) and Kohatu (NZ), imparting flavours of soft stone fruit. The second brightest star in the constellation Gemini was the inspiration for this deliciously hoppy beer. Castor follows the same recipe as Pollux, differing only in the hops used. A new experimental Michigan hop was used in brewing, delivering notes of lemon meringue, to nicely complement the bready, toasted malt character throughout the brew. The ABV exists somewhere in between a Pale Ale and an IPA, hence the name “Extra Pale.” With a color reminiscent of an April sunset, this beer gives us something to look forward to in the later months of winter.

This easy drinking IPA packs a hoppy punch without the bitterness. Casual is a light bodied ale featuring citrus and tropical hop flavors thanks to copious additions of five different hops during the dry hop process. this beer is ideal for any time of year when you want to kick back and sip on a few beers.

Built from recipes found in historical documents during research for the book North Carolina Craft Beer and Breweries. This dry beer contains molasses, ginger, wheat, rice, and North Carolina grown barley.

This pungent IPA recipe was like a phoenix that rose from the ashes of hop politics. Faced with a serious shortage of Citra in early fall (2013), we had to put the production of Roman Candle momentarily on hold. In its absence, and to mend our broken hearts, we devised a recipe that was all about utilizing the pungent citrusy kick of two hops we call favourites here: Summit and Simcoe. The malt body is extremely light, which allows the focus to stay on the hops, both in aroma and bitterness. The final product took us a bit by surprise: it wasn't just a runner up, but a hoppy sensation that would prove to give Roman serious competition. You decide which IPA reigns supreme.
