American style brown ale with full body, nutty sweetness and smooth, balanced finish. This beer is brewed and fermented as it is and, just before it goes in the keg, we make our super-secret, super-delicious chai spice brew and blend it into the ale to taste (to our liking). There is no tea in the steeped brew but it is generally inspired by a chai-tea style of spice blend.

Sometimes things go exactly as planned, sometimes they don't...this beer celebrates all those things that didn't go quite right with a chai-spiced version of our milk stout. Cheers to those happy little accidents!

In homage to the original, Duvel, we have given this beer a devilish name with a twist. Martin Luther once said the devil “can do no more than a chained dog, which may bark, run here and there, and tear at the chain. But because it is tied and you avoid it, it cannot bite you.” This beer bursts with flavor and aroma. First you be enticed with notes of pear and banana. Then your palate will be washed with spicy, floral notes to be followed immediately by a noticeable alcohol warmth. It will tempt you to drink it again and again, but, be warned, this dog has a bite!

Chainsaw princess of karate is a collaborative kettle sour we did with Odd13 brewing that features dragon fruit and passion fruit. The beer pours hazy pink with a mild sour pucker and distinctive passionfruity-ness. Each brewery kettle soured then fermented the beer using their own house micro-organisms. Our version uses lacto for souring and is fermented with a blend of saison yeast and Brettanomyces. "Turn off the idiot box, It's a disease just like the chickenpox." The Fury of the Aquabats!--1987

This beer is a part of a Single Hop IPA series by Mikkeller. We created this series to showcase hop varieties on their own. This gives the consumer the possibility of smelling and tasting the unique characteristics of each variety and hopefully helping to educate people about the wonderful world of hops. For each beer, the single hop variety was used in the same weight for bittering, aroma and flavor and for dry hopping. All 19 varieties of single hop beers in this series were brewed the same week and with malts from the same batches and the same yeast and fermentation temperatures. This is done to better compare the characteristics of the different hop varieties.

Cham’Pain Domain is a special brew made to ring in the New Year, fermented to a hefty 14% ABV to send off 2014 properly. A hybrid of several styles, Cham’Pain Domain combines the bright citrusy hop profile of an IPA with a Wit Biere grain base of raw wheat and 2-row barley malt, and then becomes a Braggot (mead/beer hybrid) with the addition of 360 pounds of local wildflower honey from Bee Natural in Smyrna, DE. Bitter orange peel was added in the boil along with the hops to further enhance and contribute to the citrusy quality of the beer. The resulting mixture was then fermented with a blend of Belgian Wit yeast and Champagne yeast to ensure a hearty fermentation and to add that perfect Champagne-like fruitiness to make this the quintessential Dogfish Head Brew Year’s toast. Champ’Pain Domain pours cloudy from the Wit yeast, which traditionally stays in suspension to enhance the flavor of the beer style, as well as the large addition of New Zealand and Australian dry hops which add a natural haze. Notes of light tropical fruit, cider, and white grape dominate the profile, along with background hints of rosewater, mint, and a gentle acidic finish. Cham’Pain Domaine will be tapping at 11:45 or so on New Year’s Eve as the toast for our epic party here at the pub, and will remain on tap until it’s all gone. “For auld lang syne, my dear, for auld lang syne, we’ll take a cup o’ kindness yet, for auld lang syne.” Happy New Year from all of us at Dogfish!

Wee heavy ales are the biggest versions of Scottish ales. They end to be fuller bodied and have more roasted flavors. Ours has a deep copper color and roasted malt flavors with just a hint of Cherry wood smoke. A chanter is the melody pipe on traditional Scottish bagpipes. Like the distinct music the chanter makes in the highlands of Scotland our Wee Heavy has itsown unforgettable flavor. Sláinte!
