Cutter (n)—a single-masted sailing vessel with the mast set about two-fifths of the way aft along the waterline Imperial IPA. Double IPA. XIPA. IIPA. Whatever you want to call it, Calcutta Cutter is our homage to hops. Lots of hops. Early hops. Late hops. Very late hops. Dry hops. Then we condition the bottles in a bed of hops. Well, maybe not that last bit, but you get the idea. With just enough malt body and alcohol to balance the beer out, we let the lupulin shine.

Cutty Can't Hang!

This Belgian table bier is a traditional entry into the Session category. It is meant to be consumed with food but also stands well on its own. When you need to drink the whole meal and want something with plenty of flavor but don’t want to get shit-twisted from the alcohol, this is a great choice. Look for a smooth malty body with hints of biscuit and rye. The hops are subdued and mostly present as a bittering agent. The yeast plays a prominent role in creating bready and lightly fruity notes.

Cuvee Ange

Cuvee Ange was inspired by the French Oak wine barrels we used for this project that once housed all French wine varietals. Fermented with wild yeast and aged in a combination of Cabernet, Merlot, and Grenache barrels with raspberries and blackberries, Cuvee Ange is a fruity, tart, complex ale. Cuvee Ange pours a bright rose with aromas of fruit, funk, and wood.

Cuvée Angelique

The "Speciale Belge" beer style was created in 1904 for a brewing contest that was organized by the Universities of Belgium. The goal was to improve the quality of Belgian beer. The winner was a new style, called "Belge". Due to the success in the contest, a number of brewers decided to brew the style and called it "Speciale Belge". A "Speciale Belge" is pale amber in color (slighly darker than a pilsner) as brewers tried to copy the color of pilsner in a top fermenting ale. Later the color became darker as pilsners became very common to prove that the style is something special. After the second world war, when the quality of life in Belgium increased, several brewers created a "Speciale Belge" with a higher alcohol content, called a "Dubbel Special Belge". The beer has a big body, high effervescence, and a deep caramel flavor. There's a slight amount of yeast based sourness that creeps in to offer balance, with a flavor that reminds of dates or caramel covered apple. Today the "Dubbel Speciale Belge" no longer exists, the current higher gravity beer styles are trappist, abbey ales and so on. Therefore Brouwerij de Glazen Toren decided to recreate this special beer style.

Cuvée Chevallier

Double fermenting, a technique that was used in the 1920's by JB Chevallier, the 5th generation of cyder makers at Aspall, to produce a highly refined cyder similar in style to a sparkling wine. A clear sparkling cyder, pale straw in colour with a fine mousse. Cuvée is dry but rounded with mouthfilling body and fruit. It has a complex appley palate with floral notes and a good lingering finish.

Cuvée D'Industrial

Cuvée d'Industrial is comprised of a blend of select barrels from our wild beer cellar. The barrels chosen for this blend were selected based on the specific unique characteristics that each brought to the blend. The various components varied in age from 1-5 years and were aged in a mix of American and French oak barrels. The resulting beer is light golden in color and displays a broad complexity of flavors. Aromas of tropical fruit, vanilla, and anise lead into malty oak flavors and a clean tart finish.

Cuvee De Castleton

This is a beer that will make you rethink your definition of beer. It doesn’t taste like any beer you’ve ever had, yet it doesn’t taste like anything else either. Pushing the limits of brewing is what makes this job so much fun. Malted barley, wild yeast, hand picked Muscat Grapes, and French oak wine barrels are just a few of the things that went into crafting this beer. Breathe deep, take a long sip, and enjoy the creation in your hand. Enjoy in a flute or wine glass.Perfume, apricots, apples, and honey are of few of the aromas you will encounter with this one. A hint of oak and “wild” aroma will come through as the secondary aroma characteristics. The flavor is tart, fruity, acidic and truly unique. My words will do it no justice.

Cuvee de Tomme

As this beer is made from our Judgment Day, there are some similarities in the taste profile. However, as this beer is aged in Oak Barrels, there are also additional layers of Vanilla, Tannins and Sourness from the Cherries and the secondary fermentation and extensive aging. A massive brown ale base that is made from four fermentable sugars including Malted Barley, Raisins, Candi Sugar and Sour Cherries, this beer is fully fermented before being placed in Bourbon barrels where the beer ages for one year with the Sour Cherries and the wild Brettanomyces yeast that we inoculate the barrels with.

Prestige is a blend of 24 month-old foederbier, spontaneously fermented in and blended from foeders IX, XI and XIV. It has a deeper brettanomyces character and an overall soft and fruity character.
