When Ben the laughing dog was much younger, he developed a habit of sticking his nose in people’s crotches to check them out and say Hello. One of his favorite people to do this to coined the term CSB (or, “Crotch Sniffing Bastard”) and so the seed was planted for the name of this beer. A British style ESB with an Laughing Dog twist, it is crisp but malty and at the same time somewhat playful, it is a great beer to have while out sniffing around, or if you are stuck at home on the short leash for maybe sniffing in the wrong places.

2015 GABF Gold Medal Winner Russian Imperial Stout was originally brewed in England during the 18th century for export to the court of Catherine II of Russia. The beer you now hold in your hand began as our interpretation of a Russian Imperial Stout. We used massive amounts of roasted barley and chocolate malts to obtain the piercing black color. Delicate usage of oats and caramel malts combine to create a rich, lasting foam. Our Russian Imperial Stout is aged in freshly emptied whiskey barrels for up to 24 months. This meticulous aging imparts a complexity of flavors that include caramelized coconut, vanilla and dark chocolate. This combination of tastes pairs well with heartier dishes.

Myth has it that this style of beer originated during British colonial times as soldiers were shipped beer reserves in India. Hops were used as preservatives but that floral hop flavor and aroma that they instilled upon the beer were an unexpected benefit. However, this style didn't take off in America until the 'Craft Beer Revolution' took off in the 1980's on the American West Coast. Over the years, the IPA and its many off-shoots have become both an icon and a staple of American craft beer as they deviate from the watery and general flavorless product that has been popularized by 'Big Beer'.

Cube Cuvée #1 represents the first in a new series of beers for us. Two years ago, we began stashing beers away in barrels to use in the production of blended sour beers that would include significant aging character. We finally have enough of these old barrels that we can begin to include them in blends. For this first release, we have selected barrels of 16 month old brown sour ale and 4 month old golden sour. Something in the ballpark of a Flemish Red, CC1 is refermented in the keg for a soft carb, and shows beautifully balanced dried fruit notes and a complex, oaky tartness. Draft only, for now.

We chose to employ the cucumber in a low gravity Saison to create a refreshing seasonal ale redolent with notes of honey, tropical fruit, lemon bitterness and of course cucumber. Brewed as a survival tool for the Florida Summer this cucumber creation features Citra and Sorachi Ace hops. So put some cucumber wheels on your eyes, lean back, relax and enjoy. Ahhhhhh.

The traditional seventh anniversary gift is copper, so we’ve named our 7th anniversary ale "Cuivre" which is "copper" in French. Cuivre is our seventh anniversary ale, loosely brewed in the English-style old ale tradition using our house Belgian yeast strain and then blended using the solera method. A portion of each of our anniversary ales is saved in our barrels and blended in with the next year’s production, providing more complexity and depth of character that comes with age.
