This is Starr Hill’s own take on the classic ale made famous by the Trappist breweries in Belgium. Fruity flavors complement spicy yeast character, while barrel aging adds notes of oak, vanilla and bourbon, creating a complex beer perfect for sipping.

Named for using about triple the amount of a grain that is used for a regular Belgian Trappist ale, ours has a slightly fruity sweetness with a yellow to gold color and a thick, creamy head. Smooth, clean and unassumingly strong, this is a true to form example of the style that gets its distinctive flavor from candi sugar and Belgian strong ale yeast.

Decadence was first released in 2005 to celebrate our 10 year anniversary. AleSmith has released a new version of Decadence each year around our anniversary date in late fall. The style chosen each year is different, but you can be sure that it will always fit the description of Decadence! Our award winning Belgian-style golden ale Deceit was aged in cognac barrels produce this strong yet deceptively smooth brew. Spicy notes in the flavor are complimented by tantalizing and complex characteristics pulled from the cognac barrels. Slight fruit notes balance these elaborate flavors and transition into a dry and inviting finish. Developed alongside over a dozen Single Hop Imperial IPAs, the Truth was three years in the making and has some of the most unique hop varieties available today.

Black Rye IPA

A full bodied brown ale with peanut butter roasted chocolate and hints of dark fruit flavors. The amazing aroma keeps no secrets, with a perfect balance between sweet and bitterness this complex ale is easy to find yourself indulging in.

A perfect copper-colored American India Pale Ale abundant with juicy fruit-filled hop aromas. Malt sweetness takes a back seat to a medley of lush hop flavors, ranging from dank wet earthiness to bitter herbs and greens. The finish is punctuated by a clean and dry grassy bitterness.

A light blonde citrus tasting beer, very easy drinking for its strength.

Decompression Double India Pale Ale is a hazy, golden yellow Double IPA with a simple and compact malt bill. We used Falconer's Flight, East Kent Goldings, Palisade and Experimental Pine Fruit hops to provide a complex and intricate hop profile. Decompression DIPA is a heavy hitter, weighing in at 9.0% ABV and 91 IBUs while still retaining its balance. Be sure drink this brew responsibly!

A Method of brewing based on isolating first principals and making pronounced through pilot brewing the desired elements that contribute to the overall flavor. A Golden Ale created by blending the final recipe with its own barrel aged pilot beers fermented with wild yeasts. Each individual barrel contributes a unique flavor from the wood chosen and the cultures resident to achieve subtle complexities that develop(ed) over time. A beer which starts sweet, filling the mouth with fruit-like esters and a mild spiciness, changing to a tart and lingering flavor reminiscent of grapefruit living amidst an earthy, citrusy hop aroma. At his restaurant, Eleven Madison Park, Chef Daniel Humm makes an extraordinary five spice roast duck. The genesis of Decoy is our notion that those spices would affectionate the fig notes of a Belgian Strong malt bill in the direction of a winter warmer. Cumin, coriander, lavender flowers, Sichuan red peppercorns and honey are added to Special B malts and Belgian candi sugars, with American ale yeast chosen because its esters enhance rather than dominate as would a Belgian. Meaning “Father Winter” in Russian, Ded Moroz, is pitch black in color. It is an imposing beer that is best enjoyed by slow sipping to fully soak up this beer’s complexity. It has a very deep flavor profile of dark chocolate, coffee, graham cracker, overripe fruit, amongst others. To add to its complexity, it is generously hopped with a large portion of imported Brittish hops to balance the sweetness and keep it true to style. Ded Moroz is a decadent treat perfect for the cold winter months!

Deep Cover Brown Ale is brewed in the tradition of the brown ales commonly enjoyed in the U.K. Despite its reddish-brown color, it is light bodied and slightly sweet, making it a very drinkable and refreshing brew. Dark caramel malts lend this ale its rich color, while toasted and Munich malts provide just enough body to be truly enjoyable.

Deep Elem is a Belgian-style, abbey dubbel. The style references beers brewed by monastic breweries of the Trappist order in Belgium and the Netherlands. Dubbels are rich and malty with minimal hop bitterness. Deep Elem falls in line with this description, being sweet with hints of raisins, prunes, and other dark or dried fruit. The fermentation flavor profile is complex, as with most Belgian styles.
