The result is an intensely citrusy, beautifully bitter beer is worthy of the simple-yet-lordly title of Stone Delicious IPA. Lemondrop and El Dorado hops combine to bring on a magnificent lemon candy-like flavor that’s balanced by hop spice. It’s unlike anything we’ve tasted in nearly two decades of IPA experimentation, and another lupulin-laced creation we’re excited to present to hopheads everywhere.

Delightfully Immoral Grisette

First of three beers released in celebration of our First Anniversary, the name Delightfully Immoral comes from Mark Twain’s book The Innocents Abroad, which immortalized the famed femme fatales known as grisettes. Subduingly seductive, these dames hailing from as early as the 17th century were famous for serving French miners a farmhouse style of beer called a grisette, a variation of the more lactic saison. Cavorting in their customary grey dresses, not only did these matrons quench the thirst of the hard working man with local beer, but they were known to supplement their income as ladies of the night. Unusual treatments in our grisette include the additions of lavender and heather, a Bière de Garde yeast, and hop varietals including Citra, Simcoe and Galena, along with aging the beer in local Virginia oak wine barrels from Horton vineyards. Earthy, floral scents coalesce with citrusy hops and peppery yeast notes to yield a dry, spritzy finish. “Oh, so charmingly, so delightfully immoral!”.

Delirium Deliria

Deliria is a pale blonde ale, brewed with pils malt, ground maize, oats and basmati rice. Hopped with Saaz, Styrian Golding and Spalter Select and dry hopped with Saaz, some coriander and a carefully selected yeast. It is also refermented in the bottle. It is perfectly balanced, with a fruity and flowery background and initial impressions of Chardonnay evolving towards a zesty but mild aroma of hops.

Brewed only for the Christmas and New Year, Noël complete the "Delirium" trilogy. Its appearance is a superb warm copper to red color, recalling "Nocturnum" except in its taste. It hides its subtlety by multiple levels of flavor and should be approached with confidence, with a tinge typical Christmas, sauced with a sweet touch, then bitterness.

The second cider I ever made was Deliverance Ginger way back in April of 2012. I felt that the simplicity of apple and ginger, while delicious, was getting a bit long in the tooth. This new bottle, on the other hand, is rather futuristic. Behold Deliverance Ginger Tonic! To each batch of cider, I add gallons of pure squeezed ginger juice, hundreds of hand-cut fresh lemongrass stalks, the fresh-squeezedjuice and zest of thousands of limes (zested by hand!) and top it off with hand-extracted quinine from the bark of the Peruvian cinchona tree. This chemical has antipyretic, antimalarial, analgesic and anti-inflammatory properties. Should you contract malaria, proceed immediately to a doctor. Otherwise, please enjoy this refreshing libation. To those fans disappointed by the departure of the classic Deliverance Ginger, I tell them that this new concoction checks all the same flavor boxes but does so with more excitement. Enjoy!
