Diamonds, Fur Coat, Champagne

Zesty, floral, refreshing. This tart wheat beer is fermented with lactobacillus and brewed with Meyer lemon zest, elderflowers, and dry-hopped with Nelson Sauvin. We wrote the recipe to mimic the floral, citrus, and grape character of brut champagne.

Dibble House

Dibble House was inspired by Grant Wood's iconic painting American Gothic and is a hybrid style (an American kölsch) that marries assertive bitterness and a clean crisp finish. The kölsch style originated from Cologne, a landmark of High Gothic architecture, and we have added US hops (to give a higher IBU than a traditional kölsch) to create an easy-drinking refreshing beer. Dibble House uses four different grains to give the beer an initial malty sweetness before giving way to a lingering bitterness. The yeast and hops add a subtle fruitiness whilst the light carbonation creates a light-medium and smooth mouthfeel.

Dibs Are for Dummies

The wind howls. Snow piles up, melts, then freezes. Days pass without direct sunlight. It's wintertime in Chicago. You can forget about parking--all of the spots are taken, saved by miscellaneous crap, known as "dibs." The tradition is practiced by first-rate idiots. So you park a mile away, shivering on your walk home. But this will be waiting for you, ready to warm your bitter heart. Our English-style Barleywine is chewy and rich, accented by an addition of honey. Kick over that chair, dibs are for dummies.

Dick the Butcher

Dick the Butcher is a no-nonsense pale ale. Cascade hops deliver a fresh grapefruit aroma and a clean bitterness. Rye malt keeps this beer dry and drinkable. The first thing we do, is raise a glass to this refreshing brew.

Didgeri Dew Australian Ale

Originally brewed by our former head brewer, the notorious Dick Cantwell, who described it as "a compelling nod in the direction of the oeuvre of our compatriots Down Under. Light bodied, turbinado sweetened, the Dew tempts us to contemplate the drinkability reminiscent of a warm aboriginal forest stroll". Well, uh, you have to know Dick. OG 14 Plato.

Die Fizzy Yellow

Our American IPA differs from the traditional IPAs, it’s more modern: it has citrus Australian hops, besides a lighter body and, for not having caramelized malt, its color is lighter. The expression Fizzy Yellow is used to denominate the boring comercial beer, Fizzy for bubbly and Yellow for its color. We don’t like fizzy yellow.

Die Königin

Die Königin is an unfiltered, unpasteurized oak-aged Kellerbier. This strong lager pours hazy, bright amber with a white head. Lightly effervescent with assertive biscuit qualities and an adequate Tettanang hop presence, Die Königin is matured for several weeks on light toast oak, imparting a creamy mouth feel and a dry finish, accentuating sweet malt qualities. This Stark Lager is produced in small quantities for lager connoisseurs with the most discerning palates.

Diebels Alt

DIEBELS Alt is brewed according to the German Purity Law of 1516. Under this "Reinheitsgebot", only four ingredients are allowed: Barley malts, hops, yeast, and water. The dark-roasted special malt lends DIEBELS its unmistakable amber glow. Dark and Delicious. For a dark, flavorful beer, DIEBELS is surprisingly light and drinkable - a beer you can enjoy all night long. It isn't bitter like many ales, and it doesn't have the strong aftertaste of certain imports.

Dim Mak

Inspired by many of Belgium’s devilish golden ales, we decided to add a touch (some might say death touch) of using Chinese rock candy sugar to help boost the gravity. Just like the ancient technique, Dim Mak is shrouded in mystery and legend. Golden and opaque, one has to rely on all their senses when navigating through this beer.

Dim Witbier

This brew is styled after the unfiltered “Bier Blanche” of Hoegaarden, Belgium. Coriander and curacao orange peel are added in the brew kettle to impart a fruity and subtle spicy aftertaste. Fifty percent wheat malt and a hazy appearance give it a “white” color. Dim Wit Bier is a signature beer of Chris Erickson. Ask the bartender to make you a Dim Wit!
