Jopen Doubting Thomas (aka Ongelovige Thomas) is our interpretation of a quadrupel. A distinct beer with rich malt as the main flavour. The American hops gives it a fruity character. This beer is named after the apostle Thomas, who would not believe that Jesus had risen from the dead. Thomas has his name-day at the start of winter on 21 December. This reddish-brown beer is a genuine winter warmer. Surprisingly rich in flavour and ideal for sipping beside the fireplace. Believe it or not, this is a heavyweight.

Dover's Black Day Porter

On Sunday, March 1, 1896, the Cochecho River had a major flood. This flood was so substantial that it destroyed several bridges and buildings in downtown Dover alone and closed the river to major shipping forever. The media dubbed this day "Dover's Black Day." We make our porter similar to the traditional style with a large amount of chocolate malt and some dark crystal malt for just a hint of deep toffee sweetness. Low hop aroma with a fair amount of flavoring and bittering hops to round out the dark chocolate and roasted barley flavors.

Down 'n Dirty Chocolate Oatmeal Stout

Down 'n Dirty Chocolate Oatmeal Stout is big, black and rich. Brewed with cocoa nibs for a sublime chocolate experience. When the railroad was completed between Madison and Milwaukee in 1882, mucky soils in the glacial. swamp near Lake Mills made the tracks most unsteady. A bridge-tender stood guard, 24 hours-a-day, to warn oncoming trains of the danger ahead and caution them to slow their pace. One engineer chose not to head this warning and the locomotive lost control and tumbled off the bridge into the mud below. The train is said to be forever entombed deep in the muck along the present day Glacial Drumlin trail. We brew Down 'n Dirty Chocolate Oatmeal Stout thick and black like the glacial muck.

For Down Deep™, we’ve put the bounty of our treasure hunt in your glass. You’ll find deep grapefruit and resinous citrus notes in the aroma, supported by a subtle but clean aroma of sweet grain. The hop flavor presents itself as resiny grapefruit and tropical fruit, with a subtle sweet cracker support from the grain. Firm bitterness and a clean, dry finish leave you ready for another sip… and very proud of the result of our hunt.
