First Frost

First Frost blends opportunist Southern fermentation with more traditional brewing methods and ingredients. It’s a tribute to “Southern scrounge” brewing (dare I call it that?), but with a traditional English-style winter ale as the base. Food-wise, the inspriation for this beer is the complex flavor of persimmon pudding. Though it’s not about recreating the holiday dessert into liquid form; instead, we wanted a beer that expressed its essence with hints of cinnamon, raison, and the slighltly tannic, savory persimmon. The base beer is a simple “carrier,” which allows the persimmon to add depth, complexity, fermentables, and flavor. In this twelve-gallon test batch, we added two pounds of mashed permission puree at high krasen with a small combination of cinnamon, turbinado sugar, and molasses. Early samples of the beer were very promising. We’ll bottle it here in a couple of days and follow up with our final First Frost chapter.

Fischer's Fresh Hop Ale

This sessionionable Pale Ale is brewed with Chinook hops grown by Hot Haus Hops in Canton, MI. Our brewery team and the Fischer Family hand-picked all of the hops used in this beer. We brewed with the “wet hops” the very next day! Instead of typical dry-hopping, we transferred the finished beer through our home-made Hopbacks to impart the freshest hop flavor before packaging. Utilizing a tantalizing blend of European Pale, Munich and Biscuit malts, this beer exibits very strong bready and fruity notes in the nose, and full flavors of citrus, tropical fruit rind and grassy hops. An underlying toastiness rounds out the flavor before finishing bone dry. What a perfect way to celebrate this year’s harvest before the nostalgia of warm summer days fade away!

After installing and setting up our brewing system, we ran a couple of test batches all the way through the process. Experimental beers, if you will. The “Fish Bowl” moniker was bestowed on them as a tribute to Chris’s grandfather, who owned a pair of bars in Kentucky by the same name. We’re reminded of him every day, as our pool table and old-school neons all came from the Fish Bowl(s). This first experiment, our very first batch, is an IPA brewed entirely with Summit hops. That variety has an extreme high alpha-acid content, imparting a huge bitter bite to the beer.
