Four Petal

A four-petalled Trillium flower is the Northwest’s version of a four-leaf clover, a touch of magic that you can find only so often out in the great outdoors. This mellow, mild, Brettanomyces-inflected pale is a true four-petal spring beer, brewed with malted oats and wheat for a velvety smooth body and knocked out with Meridian and Horizon hops. We then racked it into neutral oak barrels to finish on Brett, making for a bright, dry, fruity beer. Limited quantity available.

Allagash Four is brewed with four malts, four hops, four sugars and four Belgian yeast strains. During the mashing process, we add Date Sugar to the mash tun. Later, during the boil, we add Light Candi, Dark Candi, and Light Golden Molasses. After primary fermentation with the first strain of yeast, we add more Candi Sugar, and referment the beer with a secondary strain of yeast... that process is then repeated with a third strain of yeast, and finally a fourth for bottle conditioning in the cellar. Four Horsemen marks our first run at barrels with the most popular of our bomber beers, Black Quad. Like its cousin, Devil’s Share, our goal was to explore the marriage of the unique Belgian yeast character with the complexities of oak barrels. Unlike the Devil’s Backbone that was aged in used wine barrels, Black Quad matured in a combination of new American oak barrels and custom charred spirit barrels. The emerging Four Horsemen features aromas of dark, dried fruit, vanilla, and spice, with a noticeable yet soft level of oak to balance.
