Volume # 2 in the 20th Anniversary series for Schlafly Brand Beers is Schlafly Hop Toddy Ale. This beer was brewed by the brewers who started between 1992 and 1997. Using a local farm connection which grows raw unmalted wheat was one of the elements of this beer. It is a slightly stronger wheat beer with an ABV of 7% aged in bourbon barrels. It has a light amber color mainly from the Honey Malt used in the brew, a heaping helping of locally grown wildflower honey as well as color pick up from char in the bourbon barrels. There is a citrus quality to this beer as well from both the use of lemon juice and Citra hops in both the kettle, whirlpool and dry-hopping. The combination of honey, citrus and bourbon flavors is reminiscent of a Hot Toddy and was a theme from which we worked this variation. Quite frankly we don’t know what to expect from such a beer, but look forward to when it is ready. We hope you enjoy this sampling of our personal stamp on the discovery and wonder of the art of exploration in brewing.

Hop Totem is our sour IPA, a beer that strikes a bold balance of bitterness, sweetness, and sourness; heavily hopped with Amarillo, Chinook, Centennial, Mosaic and Galaxy hops.

Azacca®, named for the Haitian god of agriculture, is a brand-new American dwarf hop cultivar big in citrus and tropical fruit tones. Its excellent aromatic qualities have quickly made Azacca® popular for late and dry-hop additions in varying beer styles. As usual, we dry-hopped this trial Pale Ale with 1.5 lbs/bbl.

This Fresh Hop Pale Ale is all about celebrating the hop harvest in the fall. Fresh picked hops have to be added to the brew immediately and in abundance. Roughly 680 pounds of Crystal hops from Doug Weathers' farm outside Salem, Oregon will be added to each 120 barrel batch in addition to some dry kilned whole flower hops. That adds up to approximately 5.7 pounds of hops per barrel brewed. Another deliciously interesting beer in our Bond Street Series. This beer was made with 500lbs of our own estate grown wet Cascade hops. The mash tun was used as a hop back.

An unfiltered IPA brewed with both wheat and rye. The subtle complexity of the different grains pairs with a trans-continental hop blend, featuring dank citric cut from domestic Amarillos, melon-like aromatics from both domestic Idaho 7 and German Huell Melon, and white grape skins from the German Hallertauer Blanc. The Chinook and Jarrylo in the whirlpool add floral pine notes with a bit of spice.

We celebrate the pioneering spirit of old Horace 'Hop' Wallop and those who dare mighty adventurous things in this vivid, robust ale. As our annual homage to the hop harvest, expect loads of aromatic splendor and bitter beauty.

Brewed as the 2,000th beer for Pete’s Brass Rail (Danville). This light bodied double IPA brewed to especially showcase the tropical citrus notes from Mosaic and experimental hop 5256. Sitting higher on the ABV, this beer won’t disappoint. Take your tastebuds on a drive thru the hop wash!

This is an all out taste bud assult. Hop Whoopin delivers up freakish goodness in a lopsided hop bomb. Don't ask the IBU's, try the IBU's (95 professionally analyzed). Smell the mixed bouquet of citrus and pine before unleashing the bitter terror. Your tongue will never forgive you! 7% ABV, tap only currently.

Bridging the gap between cider and beer. Our special blend of hops has a citrusy, and slightly hoppy flavor profile you’ll have to experience to appreciate. Dry.

American Strong Ale. Deep Copper with a rich full bodied, toasted malt character and a touch of caramel overlaid by an aggressive assortment of hops

Hop ’n’ Honey is an Americanized Hefe Weizen...golden straw color with thick foamy head and medium body. This ale is cleaner and crisper than most traditional wheat beers with a distinct ’fruit loops’ characteristic (although some have suggested hints of Hawaiian Tropical Punch). We brewed this sessionable beer with American hops and local SC honey. Deceptively light and easy drinking

Our new hopped cider's bright apple sweetness is complemented by floral notes from the Strisselspalt hops and tropical notes from the Galaxy hops. All the hop goodness and none of the hop bitterness. Hop’N Mad Apple is available on draft in select cities and in 6-packs nationwide.

This “triple” India pale ale is utterly smooth with a powerfully hoppy presence and pleasing 11.5 percent content of alcohol by volume. Its Chinook and Amarillo hops are at once earthy and floral, and its full malt body provides a sweet, sticky finish that isn’t so cloying that you wouldn’t take a second sip. That next gulp soothes the palate with a softness you wouldn’t expect from any IPA. You might even find honey and fruit notes that are sweet as melon.

Our signature double dry-hopped IPA is a finely tuned rock combo of hop flavor using eight separate additions of the finest Simcoe, Amarillo, and Citra hops. It delivers tangy hop aroma and flavor followed by waves of glorious hop bitterness on the palate. The steady backbeat of malt aroma and flavor comes from English Maris Otter and Crystal malts. A classic Upper Midwest IPA.
