Inspiration is easy to find if you know where to look: inside a barrel, up in the trees, half a world away. Named for Isabel, Princess Imperial of Brazil, a leading producer of both oranges and cacao. Isabel was also a member of the royal House of Bourbon. In this sublime porter, residual malt sugars from the beer meld with the cacao nibs to produce an intense chocolate flavor, while the orange peel adds a citrus undertone that carries the oak-imparted vanilla and bourbon flavors through on the palate.

This beer style comes from the NW German town of Köln. It uses a specific type of ale yeast that requires a lager period after fermentation. Due to this, many consider this style to be a ‘hybrid’ beer that blurs the flavor lines between ales and lagers. We were able to get our hands on yeast from the Päffgen brewery, the oldest remaining Kölsch brewery in Köln. Bready, faint bitterness, slightly fruity character from the yeast and Hersbrucker hops. 4.8% ABV 22 IBU

The collaborative beer was the work of five brewers - Sam Calagione (Dogfish), Tomme Arthur (The Lost Abbey), Adam Avery (Avery Brewing), Rob Todd (Allagash), and Vinnie Cirulzo (Russian River). The guys all took a trip to Belgium together a few years back and decided to make a beer together - this is it. The beer was brewed at Tomme's brewery and each company put in a few barrels of beer and some of their house yeast. The result is a tasty sour ale. The original label artwork was painstakingly painted by Sam Calagione.

Sarah Billick, a friend of Lisa's, spent a year taking classes and interning at the Isar Brau Brew Pub in Munich. She brought back the recipe for their Wheat Beer, and we made it here at the brewery. This year's version has the same clove, nutmeg, banana, and tutti-frutti aromas, with the clove and nutmeg taking the lead. A little acidity balances with the sweetness of the beer's fruit flavors. Crisp and refreshing - just the thing for summer.
