Irish Red Ale

There is no consensus on the original motive of the reddish color of the Red Ales, but today it is given due to the use of caramelized and roasted malts. The presence of bitterness is from medium to low and there is barely the scene of hops, but the balance with the typical malt of the good beer is always present. Harmonizes well with meats and, although it's complex, it's an easy beer to fall in love with.

\Guinness"is the prototype of all modern stouts. Many people don't realize that there are different varieties of \""Guinness\"" brewed around the world. \""Draught Guinness* and \""Foreign Extra Stout\"" are the two primary types brewed in Ireland. Foreign Extra is the one I have emulated. It is closer in style to the London Porters of old than to modern stout. Very dark and rich not as dry as Draught about 6% abv and around 60 IBUs (that's hop bitterness). I used \""First Gold\"" hops because that's what I could get. Guinness use Nitrogen mixed with carbon dioxide to dispense their stout which adds to the creamy mouth-feel. BTW: The \""Imported\"" Guinness you buy here in the US comes from Canada. It could just as well be brewed in the US but the common wisdom in the brewing world is that Americans prefer \""imported\"" beers and will pay more for them."""

Irish Style Dry Stout

The type of Stout commonly found in Ireland. A rich malt grist of dark grains used to brew this results in its being completely opaque in colour. Some Black Malt, lots of roasted Barley and a good amount of flaked Barley are used to provide the characteristic dryness found in the finish of this brew. A richness or strength may be perceived but this stout is actually less in alcohol percent than our Kolsch. The hop used sparingly is imported English First Gold.

Irish Walker

Irish Walker is an English-Style Barley Wine. It has malty finish with a pronounced fruity quality. Irish Walker is dry hopped with a generous amount of English hops yielding a wonderfully spicy hop bouquet and flavor with less bitterness. The color is a deep mahogany. The body is full. Irish Walker is being poured in a 12oz glass, the server should remember that the alcohol level is 7.7% alc/vol and therefore should be careful not to over-serve someone. The smooth balance and maltiness of Irish Walker could be deceiving for some drinkers.

With a full body and robust flavor, it's no wonder why Catherine the Great requested this high octane style of stout for her Imperial court. Despite the name, Russian Imperial Stout was originally an English style, brewed with a high alcohol content and an increased amount of hops to preserve the beer on it's long voyage to Russia. Although ours won't make the same journey, we followed the same philosophy. At nearly double digit alcohol and plenty of hops for an assertive bitterness, the real focus is the roasted malts providing the rich flavors of coffee and chocolate. Pairs well with hearty dishes like the braised short ribs, but we prefer drinking one alongside a rich chocolate dessert such as the chocolate combustion cake.
