K is For Kriek

“B” is for “Brooklyn.” We all learned that in school, yes? But “B” is also for “Belgium”. And when our brewmaster first visited Belgium in 1984, he learned that “K” is for “Kriek”. “Kriek” means “cherry” in Belgian Flanders, where for centuries Kriek beers have been made by adding cherries to lambics and other sour beers. Here in Brooklyn, we based our distinctly American take on Kriek on our dark abbey ale, the estimable Local 2. To this beer’s subtle marriage of malts, dark candi sugar, local wildflower honey and zing of orange peel, we added tart dried whole Montmorency cherries from Michigan. Around this, we wrapped a barrel of charred American bourbon oak. The sugar of the cherries began to ferment away. The barrels hissed. And we waited. Six months later, the beer emerged with a glowing red color, vibrant acidity, complex fruit aromatics, and a foundation of oak flavors, its strength moving past 10%. Its transformation almost complete, the beer joined priming sugar, Champagne yeast and wild Brettanomyces yeasts in the bottle and underwent a third fermentation. And we waited yet again. Now, a full year after we brewed it, this beer is ready for your table. K is for Kriek is dry, fruity, tart, full-bodied, and expansive, able to be enjoyed now or after years of cellaring. This beer is wondrous with poultry, duck and pork dishes, tremendous with goat cheeses, and a fine pairing for desserts. We originally made this beer just for ourselves, as part of our unreleased Ghost Bottle series, but it was too tasty to hoard. Beer is for drinking. And K is for Kriek.

With a nice, smooth malt backbone, and some mild alcohol warmth, this bold DIPA packs a punch (at practically 10%) and coats your tongue with an intense, yet pleasant bitterness. K. Sutra has intense tropical, citus, pine, and melon flavors that dance on your tongue. It makes you wonder what it might be like to drink it in a different position! Yup, I went there.

For those of you that don’t have something as prestigious as an English minor from a Big Ten party school like our brewmaster, “Kadigan” is a placeholder word, such as “thingamajig” and “John Doe.” We didn’t have time to lager an Oktoberfest this year, so our dunkelweizen (German for “dark wheat”) is this year’s placeholder. This beer is super easy drinking at 4.5% ABV and has absolutely no discernible bitterness. With notes of caramel, wheat, clove, banana, vanilla, and touches of citrus, putting down a liter stein or two is pretty much no big deal. Prost!

Kafkaesque

Kafkaesque is defined thusly: 1.Marked by a senseless, disorienting, often menacing complexity. 2.Marked by surreal distortion and often a sense of impending danger. We took the definition of Kafkaesque seriously when we created this beer. Our brewers viewed it as a challenge to create a beer so complex and bizarre that it would make Franz himself proud. We started with an Imperial IPA, then we transformed it into a rye IPA with a menacing portion of rye malt. Then, we made it disorientingly black with some heavily roasted malts. We needed more complexity, so we made it surreally smoky with cherry-wood smoked malts. Lastly, we added 300 lbs of raspberries for fruitiness, and everybody knows you can’t have a complex beer without wood, so we let sit on toasted American oak. We know that you will find this Imperial Smoked Black Rye Oaked Raspberry IPA to be very Kafkaesque.

Kaiser Alt - Select Series

Our Alt beer is similar to the commercially produced alt beers that are made in Dusseldorf today, only stronger. It is made with German Weyermann malts and is hopped and dry hopped with German Perle and Spalt hops. This gives the beer a very malty character and a pleasant hop aroma and aftertaste. The result is an aromatic dark brown ale with a sweet malty taste.

Kaiser Bill's Pils

After driking a few glasses of our popular golden lager Bill's Pils, we wondered what would happen if we took everything we loved about the sytle and increased the amount of ingredients. The result is Kaiser Bill's Pils, a stronger, hoppier golden lager. We used about as much pilsner malt that could fit in our mash tun to boost the ABV above 7%, while still maintaining a beautiful golden color. Then we added a proportionally lager dose of Euro hops for some extra bitterness and intense aromatics. We suggest that this beer be paired with the Lobster Crab Cakes. Prost!
