Kalashnikov Russian Imperial Stout

The strongest, darkest of ales was originally brewed by the British exclusively for the Imperial Court of the Czar. This recipe uses imported English Pale Malt, gererous portions of Dark Chocolate Malt fo a smooth roasted character and Golding Hops for a light floral balance.

Kaleetan Lemonweizzen

Kaleetan has a wheat base. Instead of going for the typical American hefe, we added a significant amount of flavor and aroma hops, using hops that have lemon qualities. At the end of the boil we threw in a bunch of lemon zest. Kaleetan was then fermented with a Belgian Wheat yeast to add another layer of complexity. The result was a smooth drinking lemonweizzen that has smooth lemon notes in the aroma. It’s slightly hoppy, but much of the hop character complements and is hidden inside the lemon aromas.

Kaleidoscope Black Ale

Starting with the general framework of an IPA, the group gravitated toward these malt elements: Pale malt, crystal malts, biscuit malt, oatmeal, roasted wheat, rice and a few other surprises were selected. To make things really interesting, Green and Black Teas were added to the mash. For the hop additions, an “inventory clean up” approach was undertaken; a little of this, a little of that. The bitterness levels were kept on the lower side to allow the tea and whirlpool additions to come through. And speaking of whirlpool additions… dried currant and Grain of Paradise were added to play off the unique flavors contributed from the mash. Throw in some English Yeast and the beer was underway. The result is a dark ale with the look of a dark roasted beer but sublimely smooth and complex from the varied layers of malt and special ingredients. Kaleidoscopic Dreamscape

Kaleidoscopic Dreamscape is an imperial version of a new style that we would like to christen as an India Cream Ale; the next logical evolution of an extremely juicy, soft, creamy, and hop forward IPA that has a low residual bitterness, and is brewed with huge amounts of milk sugar. Potent tangerine, apricot, and peach is predominant and complimented by a soft bitterness with citrus notes from the lemons and oranges added in the whirlpool. Lingering sweetness and a full-bodied creamy mouthfeel provided by the lactose and flaked grain compliment this quadruple dry-hopped ICA. Finally, for cans only, we dosed this beer with liquid nitrogen in small quantities to further boost the creamy texture and provide a longer lasting head without upping the carbonation with prickly Co2 bubbles! Draft is carbonated normally.
