La Cuvee Alex Le Rouge, a legendary brew from BFM, is a Jurassian Imperial Stout clocking in at 10.276 % vol. With its ebony colour, a dense coffee flavoured foam, the bouquet incorporates hints of liquorice, Bourbon vanilla, and Sarawak pepper. Dry hopping (detectable in the upper nose) and the use of roasted malts are also present in the beer. On the palate, Alex Le Rouge introduces burly and creamy tastes with developing aromas that are slightly acidic, but the finish proves to be long with a subtle tartness that grants this revolutionary Cuvee its ungovernable supremacy.

The second release in our Legendary Series, La Dame du Lac is our interpretation of a traditional biere de garde, or "kept beer." This beer is a tribute to our very own "dame blanche," and one of the most well-known spooky urban legends around east Dallas – the "Lady of White Rock Lake." In her honor we toast this ghost, and hope she one day finds her way back home. But hurry, because like her many sightings, this beer is also known to suddenly disappear.

Brewed with European Pilsner malt, German wheat malt and a hefty dose of turbinado sugar in the kettle, this beer clocks in at a hefty 9.14% abv. Despite its strength it has a dry finish and is very drinkable. The traditional Belgian yeast packs this beer with tropical fruit flavors, a mysterious earthiness and an inviting spiciness. In addition, we added grains of paradise, coriander and the peels of fresh clementines. Phil Farrell - a local homebrewer and beer freak – brewed this with me for a “pro-am” competition.

India Pale Ale originated in early 19th century England when India was under the control of Great Britain and colonists yearned for the beer from home. Due to the time it took to reach the shores of India, and the heat along the way, that beer often spoiled. The brewers knew that hops are a preservative against infection, as is alcohol, and by increasing the amount of both, they could make a beer that could survive the long voyage. Thus was the birth of India Pale Ales, a very hoppy and bitter ale with a higher alcohol content. The American versions of this style use American hops which impart a floral, citrusy aroma and a powerful hop bitterness. Brewed with 2-row pale ale, caramel malts and American grown hops from the Northwest.
