La Grivoise de Noël est une bière brune au parfum d’épices et de bonbons aux petits fruits. Sa bouche est un assemblage complexe de caramel, de réglisse, de cardamome et de piment fumé. Le tout s’étire dans une finale suave, chaude et caramélisée, appelant le dégustateur à sombrer, toujours un peu plus profondément, dans la grivoiserie.

Don't be afraid! This dark, malty ale is SMOOOOOOOTH, with a distinct chocolate background.

A blend of different beers, some of which are barrel aged up to 2 years with morel and amarena cherries. Intense amber with ruby highlights, the nose is extraordinarily complex with fruity aromas of morel and amarena cherry perfectly blending with subtle ethereal notes, acetic and lactic flavors and hints of oxidized malts. It has a sapid, full mouthed lasting palate with a magnificently elevating sour finish. A beer for strong emotions, it is an homage to all lovers beyond time and space. ABV. 8,0% 18°P The moment I blend La Luna Rossa represents a mile stone in my history as a brewer when I feel truly proud and satisfied with my work. This beer has the longest maturation and its brewing resembles wine making in that regard. It is always very emotional when Myself and Luca (a solid presence at the Brewery) find ourselves between sour splashes and leftover pieces of fruit that remind me the “visciole”(morello cherry) my grandfather used to eat while playing cards. The start is a sour base which has undergone at least 2 years of mixed fermentation with acetic and lactic bacteria as well as Brettanomyces strains. Amarena and morel cherries are then added for additional flavor for at least 6 months. The beer is then blended with part L’Ultima Luna and part young beer and poured into numbered bottles indicating the year of the curvee. 12 more months of maturation in bottle are required before entering the market. La Luna Rossa resembles a Flemish red based kriek beer and is extraordinarily complex and elegant. Lovers of this blend find it hard to forget.

Cette bière a été mise au point à l'occasion de la bière de Noël 2004. Sa couleur noire a surpris, son goût grillé et boisé, sans être ni amer ni sucré, a enchanté. Début 2005, grâce à un séjour à Charleville Mézières, son nom définitif lui été donné. C'est un malt torréfié, comme un grain de café, qui donne cette robe si particulière. Convient particulièrement pour la cuisine à la bière, notamment pour la carbonnade flamande.

Our winter stout is brewed with jurassian spelt wheat and a complex mix o’ malts. La Mandragore’s colour is bright black with dense coffee foam. The nose reveals notes of pepper (Golding hop), smoke and roast. Creamy, mild, and aromatic on the palate, La Mandragore presents a long finish with medium tartness.

Brown Hefeweizen A German-style Hefeweizen, rich in color, and clove aromatics.

A slightly sweeter, English-style brown ale. A bit of crunch, a bit of caramel, like toast drizzled with Lyle’s Golden Syrup.

La Nena Hoppy Wheat combina el clásico estilo de cerveza trigo con la adición al lúpulo de Barbarian. Esta nena se caracteriza por aromas a plátano y clavo de olor que se fusionan con los aromas cítricos y refrescantes del lúpulo. Protegidos por una densa e infaltable espuma blanca. A modern interpretation of a Belgian classic, this wheat and oat based beer is crisp, tart, and refreshing. Traditionally, white beers have been finished with dried coriander seeds and orange peels. In contrast, Boese Brothers utilizes fresh ginger, lemongrass, and El Dorado hops to deliver a subtle, dry, and refreshing beer with fruit and spice notes. The traditional Belgian yeast strain, in combination with relatively warm fermentation temperatures, delivers a bouquet of supporting fruity aromas and flavors, with a slightly tart finish.

Belgian inspired ale brewed with coriander and local citrus

This is the bourbon barrel aged version of our La Petite Mort. Aged in freshly emptied Kentucky bourbon barrels for over 6 months. We release this beer each December before the holidays.

It has a deep golden color and a full, malty body with an earthy hop character and a slight yeast spiciness 7%abv

Inspired by the popular Mexican beverage "Tepache", this kettle-soured beer was fermented with pineapple rind and juice which makes for a tart, funky, and refreshing weisse ale.

La Pitoune propose un nez richement malté et herbacé, surplombé d’une mousse riche et dense. Sa bouche, vive et croustillante, s’étire dans une amertume durable qui en fait un rafraîchissement de choix. La rivière St-Maurice fut la dernière rivière dravée du Québec. L’opération de nettoyage lancée au milieu des années 90 mit officiellement fin à un siècle de flottaison, redonnant au peuple mauricien et aux gens venus les visiter ce joyau qui leur appartenait.

This beer was created on February 4th, 2010. It is composed of 4 varieties of cereals and 2 varieties of hops. A “cask” version is set aside for the 5th anniversary. This is my IPA!
