We're proud to produce this once noble beer, and are doubly proud to have made Nova Scotia's very first Bière de Garde. Made with simple base malts and dark caramelized sugar this seemingly simple combination of ingredients yields an ale of noteworthy complexity. With notes of biscuit, caramel, toffee, as well as tangerine, peach, nutmeg, clove and allspice. We lagered (well, guarded, actually) this ale for weeks until it was perfect. It's remarkably smooth on the palate and although it has a dry finish, it has a lingering spicy aftertaste that invites you to take another sip.

La Trappe Quad Oak-Aged Batch #11

In Batch 11 Malbec barrels were used, though a rather large portion of Quadrupel aged on new wood has been added too. This batch is quite complex. The aroma of the Malbec is very noticable, lots of oak flavours from medium toast, and vanilla and almond from high toast barrels, floral aromas from Acasia and obviously the beer aromas from the quadrupel. Very robust and rich in tannins, which warrants a bit of extra maturation in the bottle to let the complexity increase and the flavour become rounder. While the red wine influence is noticable, the wood has the dominant note. A must for everyone who likes heavy beer and/or wine with lots of wood flavour and aroma. 55% Used Malbec barrels 20% New French oak, medium toast 20% New French oak, high toast 5% Acacia wood.

BATCH 7 is blended in June 2011 and is the first batch (of two) that has matured in old whiskey barrels. These barrels come from different whiskey distilleries such as Bowmore, Tamdhu, Strathspey and Laphroaig (Johnstons). The aroma’s of the whiskeys have an obvious impact on the final flavor. This flavor is remarkable and clearly different from those of previous batches. Peat and burnt are more present, while wood and wood tannins are less obvious to spot. But the warming effect of the full, robust flavor the whiskey barrels passed on to our already beautiful Quadrupel, makes this batch maybe even the most tasty brewed to date.

Labatt 50
