Mattina Rossa is a beer that was a long time in the making. It was brewed in August of 2008 with a base of 2-Row malt and 440 lbs of local raspberries in the mash. It was then conservatively hopped with Tettanang, German Tradition and Saaz and fermented with our house yeast strain. Shortly after primary fermentation, the beer was racked into eleven red wine barrels, nine of which were inoculated with either Lactobacillus or Brettanomyces "Allagensis". After one year, we placed an additional 100 lbs of local raspberries in five of the barrels. The beer continued to age for an additional year, at which time the barrels were blended to strike the desired balance of fruit and funk. Mattina Rossa has an aroma of fresh raspberry, strawberry preserves and lemon rind. Raspberry is also discernible in the flavor, along with mild quince and pomegranate. The long finish starts with a tart citrus and ends with a pronounced biscuit flavor and a slight bitterness.

Maude’s mild is our interpretation of a winter session beer. Milds are, by definition, a lower strength beer and Maude doesn’t venture from that. However we used malts that would add complexity to the beer, which manifested in dark fruit characters in the beer – notes of prunes and raisins. This dark fruit character is the defining feature of this lower alcohol, easy drinking winter session beer.

Ale brewed with Honey and Kaffir Lime Leaves

Mauna Kea Pale Ale is an American pale ale. The malts and hops are from the Northwest. Medium copper in color with a superbly well-balanced hop flavor. It is named for the majestic mountain on the island. Winner of the Silver Medal in the 2010 US Open Beer Championship in the American Pale Ale Category.

Don't let the high alcohol in this ale frighten you. We've taken care to condition and age this beer to perfection. You'll find a myriad of flavors including dark fruit, chocolate, and espresso, as well as some gentle heat from the alcohol.

German style strong dark lager beer. Maximator is dark brown in color with a very rich and smooth malt flavor and finish. The alcohol strength of this beer gives a somewhat warming feeling in the finish. Bock in German means “goat” (to describe beers with a kick). Dopple mean “double”.

Belgian-style dark ale brewed with specialty Belgian candi syrup, chocolate malts and a unique Belgian yeast strain. Full-bodied with flavors and aromas of dark fruit and spice.
