Saphire 1PA

YOU be the judge! No, this isn’t a typo…1 “P” is all you need. Named for the legendary UD law professor, Rich Saphire, Saphire 1PA is a Double IPA brewed in that classic citrusy West-coast style using hops from Rich’s beloved stomping ground of San Diego. Easy to mispronounce, maybe, but it’s also easy to drink. Refreshing with a bitter bite, Saphire 1PA finishes with a delicate sweet malt finish…but only after your taste buds recover from the hops! Much like Rich Saphire, the tenured high ABV makes a strong case and commands respect. Already affectionately known as “1P” around the brewpub, Saphire 1PA awaits your judgment!

Sapient Trip Ale

Why is the Grim Reaper holding a mailbox? Well, that mailbox is from a dead Dark Horse beer. The Grim Reaper better know as "Death" was quite found of our classic Sapient Summer Wheat Ale. When we changed it into a Belgian Style Triple, Death thought it would only be appropriate to bring something from that beer into this beer. So he picked the mailbox, and we weren’t about to argue with him. You can say what you want about him, but that Death sure has a big heart. So anyway...we brewed this beer with a Trappist yeast strain so it is very traditional. The flavors are incredibly complex with notes of mild fruit and finishes with a bit of clove. Although this beer is higher in alcohol it is very smooth and finishes dry on the pallet.

Sara's Ruby Mild

Mild ales are part of the English bitter family, generally clocking around the same or slightly lower ABV as “ordinary bitters” but usually with a little less pronounced hop character. They tend to exhibit nice balance, and Sara’s Ruby Mild is true to form in this regard. It’s light in body and makes for a great “session beer”. In the UK, milds are lunchtime beers, favored by miners in the Midlands and other laborers who want refreshment without dehydration.
