For this sour we inoculated our Lookout Mountain Lager wort and waited. Not satisfied with a mere sour, our brewer added blueberries to the fermentation process. The result is a tart, sweet, refreshing sour with notes of blueberry and grape.

The Bavarian classic wheat is recreated here with all the elements you love: unfiltered beauty, refreshing flavor, and the distinct hint of banana & cloves. This saison was brewed to mimic Sauvignon Blanc wine. We brewed it with Nelson Sauvin hops which are grown in New Zealand and showcase grapefruit peel and grapy aromas, then aged the beer in Sauvignon Blanc wine barrels for 2 months.

Barrel-Aged Belgian Strong Blond Ale (Chardonnay; w/ Brettanomyces & Chardonnel Wine Grapes)

Based on the Belgian “patersbier” which Trappist monks used to brew for sustenance that would allow them to continue to work during the day. This low-alcohol farmhouse beer is brewed with Pilsner malt, Czech Saaz hops and our house Saison yeast to provide a satisfying end to a long day of hard work.

This is our interpretation of an "oyster stout" but rather than use oysters, we evoke the sea by using a mix of shiitake mushrooms, white shiro miso, and wakame seaweed.

Burnt Caramel, cinnamon and contemplation. Why Dubbel? Well, double the alcohol, double the ingredients and double the time to create. We love this rich and complex beer with hints of burnt caramel, dark fruits and warming alcohols. Perfect for a winters evening!

Spices, lemongrass and bubbles Our take on a traditional farmhouse ale with added zest. This Saison delivers a burst of Belgian yeast spices and lemongrass flourish on the nose which are complimented by the floral, citrusy Crystal hops. The refreshing, bittersweet mouth feel is brought to life through Champagne effervescence created by a secondary fermentation on Champagne yeast.

Likewise, Saw Works Brewing Co. is located in Knoxville, TN, home to the University of Tennessee and the hallowed Neyland Stadium. Made with Riverbend Rye Malt from Asheville and real tupelo honey, this medium-bodied ale has a crisp, distinct flavor with a hint of honey.

Named for the Sawtooth Wolf Pack of Yellowstone National Park, Sawtooth Belgian White Ale is an untamed mix of wheat, oat, barley malts and spices. This traditional Wit is left unfiltered to capture the unique flavors of the yeast used in fermentation, and give the beer its wild, cloudy, golden appearance. Real Curacao bitter orange peel and crushed coriander imbue the aroma, taste and satisfying finish of this crisp, effervescent brew with its legendary, bone chilling refreshment and bite.
