Smoke

Ebony-hued, Smoke wafts out of the bottle and into your senses, borne on the wings of European traditions, wrapped in American innovation. Lager-brewed, like any true Baltic Porter, with smoked malts from Bamberg, Germany, the home of Rauchbiers, then mellowed by oak-aging. Black malt flavors mesh with notes of raisins, plums, figs and licorice with the subtle smoke on the side, for a complex and luxurious, yet silky smooth drinking experience. It's a sipper at Alc. 8.2% by VOL., but everyone knows you can't have Smoke without fire!

Smoke & Dagger (Nitro)

Cloaked in mystery, this dark black beer skirts the line between a schwarzbier and smoked porter. The use of a small percentage of traditional Beechwood smoked malt adds complexity and balances the liberal use of chocolate malt. Notes of roasted grains, beechwood smoke and coffee accompany a full bodied and sweet chocolatey malt character.

Smoke Break

It’s Shiftee time again, and since the weather’s nice, we figured this was a good time for a smoke break since those have to be taken outside here in Charleston. That trusty 8.5% Shiftee ABV is still here, again making it a great shift beer for our friends in F&B, but this time it comes largely from wheat. Three varieties of wheat were used, allowing the body to stay on the drinkable side and the smoke to really make itself known.

Smoke From the Oak (Apple Brandy Barrel Aged)

I am a big fan of oak aged beers, as you can probably tell from yet another addition to the “Smoke from the Oak” series. And I have to tell you, it is getting harder and harder to find new and exciting barrels to age our Smoked Porter in. This one was simply dumb luck smacking me in the face as I perused the shelves at my local liquor store. Apple Brandy has been produced in this country for centuries, so why not age our full bodied Smoked Porter in freshly emptied barrels from one of America’s oldest distilleries. Straight from the Captain’s cellar to yours, we hope you enjoy. Smooth and rich, wtih a hint of heat from the barrels, and a touch of acidity.

Smoke From the Oak - Bourbon

I am big fan of bourbon. It is one of the only true American distillated, and has a long rich history to go with it. Many people don’t know that by law, for a whiskey to be called bourbon, it must be aged in brand new, charred American oak barrels. So once that bourbon is dumped from the barrel for bottling that barrel can no longer be used to make bourbon and is of no more use to the distiller. That’s were we come in. We acquired freshly emptied bourbon barrels to age our Smoked Porter in, and it was worth the extra effort. We present to you the perfect marriage of beer, bourbon and oak for you to enjoy.

Smoke From the Oak - Port

Of all the different versions of the “Smoke from the Oak” series this one was the easiest to conceptualize. The flavors of Port and Porter are very complimentary to one another and the marriage of those flavors inside the oak barrel produce a truly unique beer. The sweetness left in the emptied oak barrels from the sugars of the Port meld with the roasty flavors of the Smoked Porter to create a totally new experience. Straight from the Captain’s cellar to yours, we hope you enjoy.

Smoke From the Oak - (Rum Barrel Imperial Version)

Rum barrels are a new one for me. I’ve never tasted a beer that was aged in rum barrels before I tasted the same beer you have in your hands. And let me tell you, it was no easy task tracking down freshly emptied rum barrels and getting them up to the brewery. But I think you will agree it was worth the extra effort. To create this beer we took our Smoked Porter and let it slowly age in barrels that once held 12 year old Virgin Island rum. Straight from the Captain’s cellar to yours, we hope you enjoy. The aroma of this beer still amazes me. It has an intensely fruity, almost grape like aroma. Hints of tropical rum intertwine with the roasty aromas of the Porter creating a sweet rum infused coffee aroma. The flavor is truly unique, with the rum barrel turning the porter into an entirely different drink. The sweetness from the rum infused oak barrel dominates the pallet, with subtle hints of coffee poking through. Definitely a new taste experience for me, and that’s why we did it!

Smoke From the Oak - Wine

The marriage of beer and oak is a truly wonderful thing. Just like wine, whiskey or rum, beer can also gain in complexity when aged in oak barrels. But if you take it one step further and age the beer in oak barrels that had previously held worLd class wine, well then you can elevate the experience even higher. This is our Smoked Porter, aged in French oak barrels that were previously used to age Merlot and Pinot Noir. We let the beer age in the barrels for around 12 months before adding a fresh dose of yeast to allow the beer to naturally carbonate in the bottle. Enjoy in a wine glass or snifter Smokey and roasty aromas are mixed with aromas of dark fruit, chocolate and a vinous character. A small hint of vanilla slowly creeps in towards the end. The flavor is smooth as silk, with layers of sweet malt, oak and roasted malts.

Roasty brown in color, the long-lingering smokiness wraps around flavors of molasses, toasted malt and an earthy hoppiness. Here's to smoke in your glass, not in the woods. Smoke on the Bayou

We set out to craft a beer that could only be made in Houston - something that couldn't be replicated anywhere else on the planet, even in a laboratory We smoked our malt at Beaver’s, Goode Company and Rockwell’s Tavern up in Cypress, and blended those malts as the base for a strong scotch ale. Houston’s BBQ scene is literally infused in the malt of this beer. Look for huge caramel, brown sugar, molasses & toffee flavors in the mouthfeel. Then the smoke subtly cuts the sweetness with a savory balance on the finish

Smoke Signal

A little bit of smoke makes everything better, so we cold smoke a portion of our malt for each batch of Smoke Signal. We take Alderwood, the smoke source used in the Pacific Northwest for smoking salmon, and flavor the malt to make an iconic Robust Porter. The Alderwood gives our Smoke Signal a slightly sweet smoke flavor that blends well with the residual sweetness of the roasted barley, dark crystal and chocolate malts. Combined with American hops, Smoke Signal delivers a savory robust smoked porter with a satisfying, smoky finish.

Smoked

Our cold rainy day seasonal we’ve been making since 2011, this year’s Smoked was made with house pressed wild apples from Estacada blended with Manchurian Crab apples.
