From the Brewmaster’s archive comes this inspired blending of Honey and IPA, yielding a strong, bittersweet, hoppy elixer that deserves the name. From the very first batch 23 years ago the tasting notes proclaim, “Mmm, that tastes like trouble.”

This Triticale Witbier is bready, citrusy, and spicy! It's made with NC Triticale from Epiphany Malting and NC wheat from Riverbend, so it's all kinds of local!

Full bodied, complex, and top hat black, Trout Stout boasts a distinctly dry roasted flavor and exceptional malt character. Here, hops play a subtle supporting role. Commanding center stage is a hearty ensemble of five varieties of malt. Roasted unmalted barley joins these to achieve this rich ale’s signature coffee-roasted flavor. We recommend Trout Stout as an excellent accompaniment to fine foods, especially oysters and other treats from the sea. Some seasoned stout lovers say this ale makes a satisfying meal in itself. While we cordially invite you to judge for yourself, please remember: Trout Stout appears only during the cooler months, and elusively at that. So, keep your eyes peeled, your rod limber, and be sure to catch your limit before it gets away.

This India Red Ale pours a deep amber color, with nice floral and citrus hop aroma. The initial flavor starts with a burst of rich malts that carries into a smooth, but apparent, hop bitterness.

The latest Troy Hard Cider, produced primarily from apples harvested in and around Sebastapol, California in 2013, starts the show with a rich, straw-hued hazy coloring that suggests no filtration and likely no fining. The aroma sports a sweetly sour note that serves as a strong layering over the peach and apple notes that linger below. There is a definite Asturian character to this cider that is made with Apples, pears and a little quince. It’s a light bodied sip that possesses a good balanced of moderate tannin and acid., but delivers a very smooth caress across the palate. The carbonation here is extraordinarily slight. The flavors follow the nose. A sour, acetic character that will remind most of fresh, light vinegar is first and foremost onto the palate. And there is a certain fresh intensity to this flavor. Past this, you get to notes of dry hay, herbs, and sour apple. The cider finishes with a slight bitter note derived from lingering tannins. This is a very unique American cider insofar as the aroma and flavor profile is unlike most produced in this country, though it will be very familiar to those who drink the Asturian ciders from Spain. An exceptionally light colored beer fermented at slightly lower than normal ale temperatures to produce a smooth, crisp, and slightly citrus finish. Expect a light bodied ale with a slight hop nose. Not a Light Beer! Just light in color and body.

This beer is brewed with a blend of barley malts and crushed wheat to gently lighten the body. True Blue is a crisp blueberry ale with an assertive blueberry nose followed by a more subtle blueberry flavor in the body of the beer. We feel you won't find another beer quite like it.
