Most brewers spend a lot of time and effort keeping lactobacillus out of their breweries; it was the first thing we brought in (it still has to stay in the corner though). We blend together two different beers to make Troublesome. The first is a somewhat uninteresting wheat beer and the second is an overly acidic & funky beer fermented solely with lactobacillus. We blend the two beers together with coriander and salt at the tail end of fermentation to create a mild, lemony tartness and a fuller sensation of mouthfeel. And yes, it's hard to make.

Troy Cider (2012)

A naturally pétillant dry cider. Wild Fermentation A delightfully archaic cider with 100% organic heirloom apples harvested from the abandoned orchards of Sonoma County. While certain cultivars such as Gravenstein are recognizable, others remain unidentified. The raw juice was fermented dry after 8 months in Pinot Noir barrels, with only the ambient yeasts in the cellar. The unfiltered result is a cloudy, lightly sparkling, and extremely raw beverage that communicates the very soul of the apple. Wine distributor Troy Carter and winemaker Tony Coturri of Coturri Winery collaborated to produce this natural cider from organic Sonoma apples. It was fermented using only wild yeasts and without any added sulfites. A juicy, fresh, and flavorful hard apple cider with 7.7% alcohol. Enclosed in crown cap.

Troy MMXIII (2013)

The latest Troy Hard Cider, produced primarily from apples harvested in and around Sebastapol, California in 2013, starts the show with a rich, straw-hued hazy coloring that suggests no filtration and likely no fining. The aroma sports a sweetly sour note that serves as a strong layering over the peach and apple notes that linger below. There is a definite Asturian character to this cider that is made with Apples, pears and a little quince. It’s a light bodied sip that possesses a good balanced of moderate tannin and acid., but delivers a very smooth caress across the palate. The carbonation here is extraordinarily slight. The flavors follow the nose. A sour, acetic character that will remind most of fresh, light vinegar is first and foremost onto the palate. And there is a certain fresh intensity to this flavor. Past this, you get to notes of dry hay, herbs, and sour apple. The cider finishes with a slight bitter note derived from lingering tannins. This is a very unique American cider insofar as the aroma and flavor profile is unlike most produced in this country, though it will be very familiar to those who drink the Asturian ciders from Spain.
