Sweet Milk Stout brewed with Lactose, Cocoa Nibs with notes of caramel

Our hop forward grapefruit pale ale is brewed and dry hopped with Citra hops. Tropical and citrus notes abound from the hops along with some tart and juicy grapefruit flavors.

The newest in our conceptual stouts series, this sweet fermentation is made with caramel, milk chocolate, and pecans, embodying all of the excellent qualities of the famous candy it was modeled after. These flavors are complimented by a large malt bill, lending similar characteristics of chocolate and rich sweet roasted grains, leading to a slightly nutty finish.

One day, friendly dino turtles were caught in a volcanic eruption -- a dangerous time to be slow and steady. Fortunately, the vigilant Pterodactyl Rescue Squad noticed just in time! The dactyls swooped down with a thunderous "CAW!" and hitched the turtles to their rescue vests. Hot lava covered the earth but the turtle dudes were safe and sound. Want to be a pterodactyl? Harness their brave and gentle spirits by sharing this beer with a dinosaur loving friend. Cowabunga! Turtles on Pterodactyls is the 3rd bottle in our "Take Flight" series. We took 2013 MexiCali Stout, aged it in bourbon barrels for 11 months & added cocoa nibs & cinnamon before blending it back with some 2014 MexiCali Stout.

This Irish red ale is full bodied and smooth. Its blend of caramel and specialty malts gives this ale a deep amber color and a silky smooth malty texture. Its gentle touch of English hops balance the maltly sweetness. Try it paired with your menu choice of barbequed meats, burgers, or steak.

Our take on the classic black ale from Ireland, this beer has flavors and aromas of roasted coffee, dark chocolate, and burnt caramel that combine with a smooth, yet assertive bitterness to create a dark ale that is also light on the palate.

Sweet nut-brown ale, rich in caramel malt with a hint of floral hoppiness. Absolutely the one to try if you're not quite sure about "dark" beer.

Tuxedo Black IPA is a celebration of the invention of the Cascadian Dark Ale style. It’s got a smooth, mellow roastiness that pairs perfectly with all manner of Northwest American Hops. Our Black is not over the the top, but balanced, allowing those who go crazy for hops and those who just like a good dark beer alike to enjoy in an unreasonably good experience.

A collaboration Ale with our friend Brad Davis from LunaR Brewing in Chicago. This Belgian-style Tripel was hopped with Galaxy and Czech Saaz hops and fermented with Ruby-red grapefruit zest. A wonderful heady nose, sweet, rich flavors of citrus end with a dry finish. 9.1% ABV

Bourbon Barrel Aged Coffee Stout Our very own Parker, of the cartoon and cat loving variety, created this cult classic character back in our 17th season. Appearing in several episodes under another stage name that was deemed inappropriate by the Feds, our executive producers and editors decided that a name change and further character development (sleepy time in bourbon barrels) were necessary to satisfy our most ardent and demanding viewers.

Tweedleyum, a Hefeweizen made with strawberries, combines the natural banana esters derived from an authentic German Hefeweizen yeast with 100% natural strawberry puree to create a slightly sweet, easy drinking fruit beer. The refreshing nature of the fruit combinations in this new seasonal promises to be something on which even Tweedledum and Tweedledee can agree.

The Goal: To create complexity centering on oak, in a multitude of forms, by brewing high gravity beers in complementary styles, aging them in different barrel formats and then blending them together to achieve harmonious new flavors. The Puzzle: To blend these various components (or lots) to create a synergistic whole that is greater than the sum of its parts. This is done with the help of a few of our neighboring Paso Robles winemakers who are practicing experts in the art of blending. The Inspiration: Firestone Walker’s oak brewing tradition and our connection with winemaking. Of course until the advent of stainless steel, brewing was intimately linked to wood barrels and vessels. Brewing has a deeply rooted history in the alchemy of blending.
