Waldman is modeled after an English Ordinary Bitter with a few decidedly Belgian stylings. It is brewed with Northern Brewer hops and 36 lbs of Belgian Candi Sugar then fermented with a Belgian Ale yeast. We finish with Brettanomyces "Wild" Yeast Strain and a heavy dose of dry hops. The Brett is carried over to the bottles where Waldman continues to develop complex flavors throughout bottle conditioning.

Just in time for hot spring and summer days, this refreshing wit is brimming with crisp orange and lemon flavors, balanced by light bready malt and a light hop character. The crisp, dry lemony finish is sure to quench even the biggest thirst. Pairs well with cheering for the home team!

This crisp, tropical 100% wheat beer, springs with fresh lime zest onto the nose and tongue; imparting citrus notes to its finale.

Brewed using three malts and Pacific Northwest hops, our IPA’s simplicity is belied by a complex and aggressive Chinook hop finish.

An American style India Pale Ale. This beer is highly hopped. It is brewed with Munich, Caramel, and Breiss 2 Row Pale Malt that gives this ale a bready, caramel malt character with fruity, citrusy cascade hop flavors. Crisp, bitter finish.

Our version of a traditional German Kölsch. Golden in color with a prominent, crisp hoppiness. A true session beer.

Golden honey color. A herbal middle, clean, crisp, cascade finish with notes of dry biscuit, and a soft mouth feel underlying hints of honey.

The very mild banana notes offset themselves gracefully against an equally subtle hop derived lemon. Light and flavorful, perfect for a warm spring day!

The Wallonia region of Belgium is known for some of the finest beers in the world. Home to the monasteries that created Chimay, Orval & Rochefort, only the beers brewed within the walls of those religious communities may claim the title “Trappist.” That doesn’t mean we can’t make something pretty darn close! The deep golden color & medium body gives an approachable first impression, but the combination of rich malt, fruity yeast, subtle hops & sweet candi sugar creates a full & complex flavor that will be a spiritual experience!

A regional ode to the rolling hills of Wallonia. This Belgian inspired Bitter Farmhouse Ale was open fermented in an Oak Foedre and keg conditioned for a smooth and fluffy mouthfeel. Subtle hints of oak and tannin drape the pallet and unfold into a lingering bitter finish.

A traditional North East Brown Ale with a twist, brewed with Bavarian smoked malt to create a subtle smoked flavour!

The Wachusett brewers banded together their over 160 years of brewing experience and developed a juicy, hazy, New England IPA. The citrusy aroma is achieved from an experimental 2-step dry hopping process using Citra and an experimental hop named 431. The other hop varieties used in this brew are CTZ, Bravo, & Simcoe. The yeast is an English strain. The color is around 4 SRM and this beer is purposefully cloudy. The grains in this beer are: 2-row pale, Vienna, Melanoidin, Acidulated malt, Torrified Red Wheat & Golden Oats.
