A Mexican favorite, the Paloma (Spanish for “dove”) is a thirst quenching cocktail made with earthy tequila and bright grapefruit fruit juice or sodas such as Fresca, Squirt or Jarritos. Served on the rocks with a lime wedge and a generously salted rim, it’s the perfect drink to get you through the rest of your week. Inspired by the cocktail, this is a light and fruity Gose brewed with ruby red grapefruit. It has a crisp citrus note with the appropriate touch of saltiness, and features smoked malt and oak to imitate tequila flavors. We hope you enjoy this smooth and refreshing new beer!

Rather than packing our latest IPA with a wide variety of hops we went back to basics to deliver a unique, intense beer. With only two ingredients brewers need to choose wisely in order to deliver a flavoursome beer and we’ve done just that. We ventured high into the Colorado Rocky Mountains to get our hands on a small batch of ZOSO Hops from Misty Mountain Hop Farm, who’ve been harvesting this unique hop for only two years. In fact ZOSO is the only beer brewed in Europe with the hop of the same name!

Pours a bright and transparent copper with a pleasant malty and slightly hoppy aroma. The taste is subtly grassy and bitter up front, then transitions nicely into a malty-caramel finish.

Well here we are again. Another year has flown by and we’re busily preparing to celebrate in the only way we know how, a massive street party hosted by The Gilbert St Hotel. We thought it’s about time to celebrate a hop variety that has helped us in producing some flavourful suds this past two years and release a one off single hop, Mosaic IPA. A super simple malt bill allows Mosaic to shine in all her glory.

Various crystal malts bring a deep amber color and candy finish to this hopped-up American barleywine. A solid hop bitterness plays off the sweetness to create flavors of caramelized figs and piney orange pith. Named after a brewery favorite Bryan Tinkerton of the Tinkertons.

Pouring a bright cloudy yellow and with a frothy white head, the Coconut Hefeweizen bursts forward with aromas of banana and toasted coconut with light clove notes layered in. On the tongue is much the same, with lots of coconut and banana coming forward in a creamy, full body. Low alcohol levels and a refreshingly smooth sip makes this a fantastic lighter option as summer winds down.

You have one type of malt and two hop varieties. This is how beers were brewed 200 years ago at the time of the first Oktoberfest. How much depth and complexity can you create given these parameters? We set out to brew a Märzen – the original style of Oktoberfest beers – for our Icon Red release following these guidelines. This is a recipe that Brock has been thinking about and wanting to brew for 20 years. The 100% Munich malt mash is decocted – part of the mash is removed, boiled and returned – which creates depth of flavor unique to this process resulting in biscuit, caramel and toffee notes in a round yet dry body. The Perle and Hersbrucker hops are both grown outside of Munich in the Hallertauer region and give the beer a floral aroma and light balancing bitterness. Our Bavarian lager yeast and six weeks in the tanks results in a traditional, rich lager that’s the perfect companion for fall beer festivities.
