Bourbon aged Abbey

This unique Imperial Stout combines roasted coffee and bittersweet chocolate characteristics from a blend of darkmalts with a heavy addition of Simcoe hops to create a complex, pronounced aroma and a deep, balanced flavor.

Our beloved coffee-infused ale gets a bit of extra love for the holidays. Bourbon soaked oak chips, orange peel, and spices take the beer to an entirely new level.

Short, Dark & Breakfast takes our Short, Dark & Handsome stout and adds lactose, coffee and maple syrup.

The third beer in our range of seasonal saisons. We think we have captured the season wonderfully with this beer, the spice of the rye, complimented by the aromatics of juniper are full of autumn aromas and flavours. Partly inspired by Sahti, a Finnish beer brewed with rye and juniper, although this is quite different to the original.

The word 'crisp' gets thrown around when it comes to Pilsners, but that makes us think of lettuce. This Pils is more than crisp, it's straight up satisfying. The balanced malt base pulls you in for a hug before the hops get frisky with floral aromas and a refreshingly bitter finish. Perfect for those who like a 'beer beer', it's best enjoyed straight from the esky with the bar-b blazing.

We’re bringing a touch of the west coast back home for this winter double IPA. Crystal and Vienna malts provide a hearty backbone and red hue, then we’ve gone all in on heavy hitting Simcoe Cascade, Centennial and Mosaic hops (including Simcoe & Mosaic Cryo® powder). Expect old school bitterness, evergreen aromas and punchy berry hop notes. Allergens: Contains Malted Barley & Rye

Elegant refinement defines the Japanese ideal of Miyabi. We blended aromatic shiso with bright, citrusy yuzu to create a refreshing and delicate cider that honors that tradition. Each moment we have with friends only happens once, and should be celebrated with fine drink and good cheer. In Japan, the saying is “Ichi-go ich-ie” — literally “one time, one meeting,” or loosely translated as “once in a lifetime.”

Amber ale

Collaboration to celebrate the 10th Anniversary of Sotones Records, Southampton’s cooperative record label. One In Ten is a dry-Hopped Grisette, brewed with lager malt, wheat and oats, plus a generous dry-hopping of Falconers Flight. Think of a sessionable, very pale, Belgian table beer with a big hit of West Coast hops.

Approach with caution. This one will sneak up on you! Brewed to keep us warm in the winter months, but easily enjoyable any time of the year. Syrup and honey give this beer an irresistible sweetness that makes it impossible to have just one. No matter what you pair this one with make sure you get plenty to eat or you might find out how this beer got its name

Belgian Saison Brewed with Passion-fruit, Camomille and Honey.

The base beer for Bishop’s Barrel No. 13 is, fittingly, Divine Reserve No. 13, our big, but drinkable Quad. BB13 pours a dark brown color with ruby highlights that supports a thin, khaki colored head that dissipates slowly. The high alcohol shows itself visually with legs that stick to the glass when swirled. The aroma brings forth a bouquet of bourbon, vanilla and Belgian yeast characteristics. As it warms, a liquid dessert is brought forth with aromas similar to flan and bananas foster. The flavor is sweet throughout without being cloying - a palate of sweet, sticky toffee with a nice dark fruit/cherry parfait accompaniment. The barrel shows itself with bourbon and subtle chocolate notes with a soft tannic finish. A full bodied beer with a soft CO2 bite and alcohol that warms the throat without being aggressive.

Cut with Bread Pudding is a festive take on our holiday tradition, Christmas Ale. Used as the base beer, Christmas Ale gives this special release a hearty, malty backbone. Cinnamon added during the boil, followed by an addition of vanilla bean to the fermenter, creates a magical blend of spices, caramel and toffee aroma. Cut with Bread Pudding has the flavor of caramel upfront, followed by a toasted malt character and a holiday spice finish reminiscent of bread pudding.

A hoppy session ale. Like a little MegaBoss, a pale ale w/big tropical fruit hop notes.
