Table Talk

Francis Fauquier, namesake of our home county, was no stranger to gambling. In fact, it was over a game of poker, complete with some rousing table talk, that Francis lost his family inheritance, but gained himself a spot as the governor of Virginia. In keeping with Fauquier’s spirit, we took a gamble with our Belgian Style Wit, adding passionfruit and guava purée for a new take on this traditional style. Packed with flavor, but still sessionable enough to enjoy again and again, we recommend enjoying Table Talk with some lively company.

When asked about his experience he replied, “Other than the war…I hated the bugs and humidity.” This is why he would bring his family on vacation to the hot, arid desert in California- Death Valley. For this collab with Ron from Jolly Pumpkin, we decided to play to both of our strengths in creating tasty Belgian and farmhouse style beers, but with a modern twist. The complexity of the malt bill really shines with layers of biscuit and spice, even though the beer finishes quite dry. Citra and Mosaic were employed in the whirlpool and dry hop to give the beer a more modern interpretation with hints of pineapple and papaya accentuating the fruity characters of the yeast.
