Snakes on a Shamrock’s recipe is based on an Irish Red Ale style, which is the predominant style in the style guidelines, but it lends itself to much interpretation, including the ability to be reformulated into a lager. It is made with mostly Pale Ale malt which is one of the more hearty of base malts. We used flaked rice for about 15% of the recipe to lighten the body and then used Crystal malts to give the beer a nice soft sweetness. We then topped it off with a splash of Roasted malt and Amber malt to give the SOaS its deep ruby hues. We used German Magnum hops for bittering, and to balance out the soft malt sweetness so there is very little to no hop aroma or flavor in this lager.

This collaboration beer with Jameson Irish Whiskey is a Nitro Vanilla Imperial Stout aged in Whiskey barrels. Nitrogenation adds a silky mouthfeel, balancing sweetness and complexities derived from a plethura of dark malts and whole vanilla beans. Four months of aging in Jameson Barrels provides a subtle barrel character that compliments its intricacies.

For this beer we’ve used a traditional Belgian Wit yeast but replaced the usual citrus with the soft, juicy, tropical mango that gives this beer a beautiful summery flavour. Subtle hops allow the delicate fruit and the tart yeast flavours to shine through. The perfect summer sipper!

mono.tone will be a series of beers that will explore a single hop variety and constantly change each time it is brewed. The fourth in the mono.tone series was the simcoe variant.
