Every once in a while an opportunity comes along to break from the norm, to buck the status quo, to join a movement and create something truly incredible that turns heads and demands attention, Something ... Wicked! This is no over-the-top, tongue-scraper IPA. SOMETHING WICKED is brewed to be smooth, balanced, approachable and (despite the ABV) sessionable. Packed with Columbus, Galena, Amarillo and Mosaic Hops, this 'gateway' IPA is pleasantly balanced with a distinctive malty sweetness that lures you in and makes way to a citrus forward hoppyness.

There is no bacon in this beer. Repeat, there is no bacon in this beer. Just the power of association. This a traditional German Rauchbier, which uses 60% of the malt as beechwood-smoked barley. Beechwood is commonly used for smoking pork, thus the association with bacon. Light to medium body, fairly low hoppiness, and a great smoked aroma pair perfectly with meats and meat alternatives. Prosit!

Americans like MORE! Especially when it comes to hops. So we took the IPA, ramped it up and dumped in loads of hops. This creates a beer with a slight alcohol presence and complex hop aromas of citrus, floral, and herbal notes. Malt sweetness helps to balance the substantial bitterness in the finish.

Our brewer, Michael, always has a song in his heart, and it makes us happy when we hear it. May you, too, have one, whether shared or all your own. “Song” is a British-Style session beer; mild, malty and never bitter. This beer is a dark ruby brown color. Soft roasty and caramel malt aromas carry all the way through to the finish.

Ray worked for six years to perfect this recipe. Soo Brew is a session ale, but very full on flavor. True beer lovers will love this beer. Made with ingredients imported from the UK, including the finest Maris Otter malt, two specialty malts which give Soo Brew it's unique flavor and the very popular UK Fuggles hops. This beer differs from English Ales as the local water, which Ray leaves untreated, doesn't give the beer the sharp back-end English Ales are noted for. The water makes this beer virtually impossible to clone outside Sault Ste. Marie. This is a very mellow, easy-drinking beer.

Most Brooklyn beers are made with a blend of hop varietals. As a chef does with spices, we look to get the best qualities of each hop and create a harmony of flavors and aromas. However, a few years ago, our brewmaster ran into a hop unique enough to deserve its own moment in the sun. A large Japanese brewery first developed the hop variety “Sorachi Ace” in 1988. A cross between the British “Brewer’s Gold” and the Czech “Saaz” varieties, it exhibited a quality that was unexpected – it smelled really lemony. The unique flavor of Sorachi Ace was bypassed by the big brewers, but we thought it was pretty cool. So we made a special beer with it, and added the beer to our Brewmaster’s Reserve special draft beer program last year. Most Brewmaster’s Reserve beers are only available for a short time, and then they’re gone. But we liked this one so much, we decided to bring it back and give it the star treatment. Brooklyn Sorachi Ace is a classic saison, a cracklingly dry, hoppy unfiltered golden farmhouse ale, but made entirely with now-rare Sorachi Ace hops grown by a single farm in Washington. We ferment it with our special Belgian ale strain, and then add more Sorachi Ace hops post-fermentation. After the dry-hopping, the beer emerges with a bright spicy lemongrass / lemon zest aroma backed by a wonderfully clean malt flavor. It tastes like sunshine in a glass, and that suits us just fine, especially with seafood dishes and fresh cheeses. It’s just the thing on nice summer days and beyond.

This Abita Beer is a message in a bottle...a distress signal for the troubled waters of our Gulf Coast. For every bottle sold Abita will donate 75¢ to the rescue and restoration of the environment, industry and individuals fighting to survive this disastrous oil spill. This unfiltered Weizen Pils is made with Pilsner and Wheat malts. It is hopped and dry hopped with Sterling and German Perle hops. It has a brilliant gold color, a sweet malt flavor, and a pleasant bitterness and aroma. In addition, related retail merchandise (hat, tee shirt, lapel pin, decal and car magnet) will be sold and 100% of the net proceeds will also go to the SOS Fund.

This American IPA features citrus and tropical fruit hop aromas layered above a slight malty sweetness. Light in color and easy on the palette, an IPA that goes down smooth with a crisp hoppy finish.

Soulman Stout represents the free spirit of the wandering hobo traveling the transcontinental railroads. Our vision of the traveling soulman is a little bitter with traces of earthiness and a sweetness at the core. Our Soulman Stout looks to capture this hobo-spirit in an ale by combing roast and crystal malts together with earthy hops. The result is an extra foreign stout with depth and dimension.

Our second release in cans, South Ridge is an American amber ale, much like an American pale ale, but darker in color, with more caramel flavor, more body and slightly more balance between hop bitterness and malt. With its combination of smooth bitterness, malt, hop flavors and aromas and a slightly dry finish, it is an eminently drinkable beer. The label for South Ridge is a caricature of the ridge south of the brewery. The origin of the name "South Ridge" came from Wally, Kristy's late father, who was a famous Boulder golf coach (he coached Hale Irwin in high school). In those days, Wally used to bring his golfers up here and they practiced driving by hitting balls up the South Ridge - hence the "fairway." The label is purposely made using a little tongue-in-cheek because Wally was a guy who liked his students to enjoy learning. He liked to have fun. So do we. Here’s to you Wally.

Originally our winter seasonal brew, Hawai‘i Nui Brewing Southern Cross is now available year-round. As with our other beers, Southern Cross is named for something special here in Hawai‘i. Since the southern sky lacks an easily visible pole star, the vertical axis of the Southern Cross is commonly used to mark south. Southern Cross beer is a Belgian-style Double Red brewed with a Belgian Yeast Strain. Big caramel maltiness and light toffee notes are accented with a subtle citrus character (jackfruit) from the Belgian yeast strain used to ferment this beer. Goes well with heartier dishes such as pork, duck, or game.

Quaffable yet complex, particularly for a lager; a perfect balance of hops and malt. Fullsteam has a woodsy aroma topped off with a caramel and toasty/biscuity maltiness. The result is a balanced beer with a clean, hoppy finish that is more flavorful than bitter. Our mission — though it may take us decades to realize — is to brew Fullsteam with 100% Southern hops and grains. When we launched our brewery in August 2010, Fullsteam Southern Lager was brewed entirely with non-Southern ingredients. Let the adventure begin.

The India Pale Ale we brew is our version of a brewing legacy. IPA’s name hails from its colonial roots. British soldiers in India didn’t have access to good beer, and all the malty ales they attempted to take on the boat with them would go stale. The addition of a generous amount of hops to their already popular pale ales created a drinkable brew that could better survive the heat and motion of the sailing ships, and a new style was born: ale with a vigorous hop profile, well-balanced malt background, and medium body. At Southern Tier, our IPA is an intrepid ale, triple-hopped on its journey to your glass for a truly aromatic experience.

Are you craving something a little more rustic? Our pilsner will get you there. Loads of Czech and German hops, the finest quality Continental pilsner malt, and uber-traditional production methods are the hallmarks of this glorious lager.

Fire Bad. Beer Good. This monster was created with some of the best chocolate and roasted malts to create the perfect blend of stout fullness and minimal fruity esters. This beer will have you trying to decide if you like the full mouthfeel or the myriad of coffee and chocolate undertones more. It will also have the other stout brewers gathering the torches and storming our door.

In the U.S., India Pale Ales have become regionalized to the West and East Coast. In an effort to set ourselves apart from the pack we are brewing a Southwestern Virginia IPA. Southwest V IPA is made from 2 Row Brewers Malt, Toasted Malt, and 2 Caramel Malts. It is assertively hopped with Chinook and Amarillo hops.
