Scratch 16

Scratch #16-2008 combines the bitterness of two aroma hops, the lush sweetness of honey and malt and an earthly yeast taste creating a Winter Warmer designed to ward off the coldest days. The dark, rich amber color comes from a combination of molasses and crystal malts; the Thames Valley brings a distinct earthly flavor; white the blend of hops creates fruity (Amarillo) and piney (Cluster) bitterness. The Winter Warmer ends with a slight warming sensation from the elevated alcohol content. Enjoy this one throughout the winter months.

Scratch 27

Scratch 27 begins a new fold in the Scratch series. For the next several batches individual Troegs brewers will create recipes of their choice. First up, The Ticeman had a hankering for a sweet stout, so the Troegs brothers and all the brewers met with Scharffen Berger Chocolate Company engineers to eat ridiculous amounts of cocoa nibs and chocolates over a few pints of beer. This collaboration resulted in the delivery of a special blend of cocoa nibs that were added during the boiling process. In addition to the nibs, lactose was added at the end of the boil to give a little sweetness in the body. The addition of Galena and Simcoe hops lends a subtle fruity balance. After primary fermentation, the beer was aged for three weeks on a blend of cocoa nibs and Ugandan vanilla beans. Dubbed Cocaoabunga, this unfiltered beer has a pleasant cocoa aroma, a subtle sweetness in the mouthfeel, a full-bodied flavor, and hints of vanilla. Enjoy!

Scratch 28

For Scratch #28, the Tröegs team decided to brew a beer to celebrate the early spring weather. The resulting brew is a take on the Roggenbier style—an uncommon German ale brewed with a portion of rye malt and a weizenbier yeast strain. Scratch #28 is loosely based on our own Dreamweaver Wheat beer recipe, but with several significant changes. First, rye malt makes up 25% of the malt bill, replacing a portion of white wheat. Malted rye gives the Troggen Roggen a spiciness, creamy mouth feel, and fantastic head retention properties. Second, lightly toasted Munich and Vienna malts contribute color and a pleasant breadiness. The Andechs Weizen yeast strain offers a clove and banana profile slightly different from our house weizen strain, and the addition of Hersbrucker and Crystal hops in the hopback give a spicy and lightly citrus end-note to the beer. As always, malted wheat gives the beer a tasty doughy flavor and thirst-quenching tartness. Unfiltered, the Troggen Roggen is a cloudy amber-orange brew meant to be drunk fresh, and in warm weather. Tröegs wheat beer fans, you’re on notice!

Scratch Beer Series - #29 O.G.: 16.8 Plato Alcohol by Volume: 7.7% Hop Bitterness (IBU’s): 80 Malt: Pilsner Yeast: Westmalle Hops: Bravo, German Northern Brewer Codename: NBPA JuJu: Cane Sugar Incredibly-hopped, lovingly-aged, and ravenously-carbonated, Scratch #29-2010 is a true brewery collaboration with cast of characters involved in recipe formulation, barrel-aging, dry-hopping, bottle-conditioning and finally, taste-testing. Scratch #29 started off innocently enough as a Pale Ale fermented with Westmalle yeast. After fermentation, the beer was aged for twelve days in virgin Pennsylvania Oak barrels supplied by Keystone Coopers. And then the fun began. Even after brief wood-aging the oak’s intensity overwhelmed the Bravo and German Northern Brewer hops used in the boil. But have no fear, a two-week dry-hop with Willamette and Hersbrucker hops dulled the oak and transformed this beer. Bottled-conditioned for three weeks before release, Scratch #29 imparts an intense spicy flavor with grassy notes from the Hersbrucker hops. Hints of orange and a slight alcohol burn come through with the high carbonation leaving “pins on your tongue” in the finish. * (Not Belgian Pale Ale. We are not Belgian, nor do we claim to be.)

Den er brygget i oktober 2008 af 7 af de bedste bryggere i Danmark, som en blanding af de 7 bryggeres egne opskrifter af øllen. Efter gæring har denne øl lagret 7 måneder på portvins fade fra vores venner i Niepoort. Resultatet er en meget fyldig øl, præget af portvinens sødme. Både duft og smag er domineret af druer, portvin, kaffe, chokolade og ristet lakrids. Kroppen opleves silkeblød, medium sød, og der følger en varm, lang eftersmag. English: Seven Niepoort Barrel is a very rich imperial stout, brewed in October 2008 by 7 of the best brewers in Denmark by a pooling of their individual recipes for the beer. After primary fermentation, this fraction of the brew was racked into a port wine barrel from our friends at Niepoort. After 7 (!) months in the barrel, the beer is intensely full bodied, with rich port like sweetness. The aroma and flavour is dominated by ripe grapes, port, coffee, chocolate and liquorice roast characters. Silky smooth and full palate with a medium sweet, warming and long aftertaste.
