Starting with a Lambic grist bill composed of 70% barley malt and 30% unmalted wheat. No yeast was artificially added to the wort, but was exposed for two days to the open air in one of our plastic tunnels at the Noordhoek Ostrich Farm. First fermentation took place in second hand sherry oak casks for six weeks. 200 grams of Northern cherries per litre and the Roeseleire yeast strain were added after six months, provoking a new fermentation process. Eight months later, we pumped over the young ale to oak casks and let it mature for another 3 years. This project was realized after a tasting of the same recipe Urbain once made 20 years ago and was barrel aging in his garage in De Panne eversince and while he was in Africa and forgot all about it. As this is a very limited version, this ale will not be suitable for export but rather for sale at the farm when available.

This golden elixir is bursting with papaya, mango, and flo-ral aromas. The tea is the star of the complex sweet start-ing mead that finishes with a dry lingering tannin.

A mix of pure Maple Syrup and Wildflower Honey. Smooth and rich without being overly sweet. Notes of flowers, apples and caramel play upon the palette. While the maple presents itself it provides a clean finish. Some prefer this mead chilled or on ice.

Oranges and vanilla beans bring together the essence of a creamsicle in this zesty mead. Summer Love inspires memories of cool drinks and a hand to hold on a hot summer night. Try as an aperitif paired with fruit and cheese. Complex and flavorful enough to energize your next cocktail party!

Made with sunflower honey, and aged in heaven hill bourbon barrels.

A cherry mead.

A mead made with wildflower honey and cabernet sauvignon grape juice. Pours ruby red, low semi-sweet with a great balance of honey and grape wine character. This mead is also aged briefly on oak which imparts an additional element to the taste as well as adds a bit of tannin to soften the sweetness from the honey. Pairs well with almost any cheese, charcuterie, and dark meats.

Non-Standard Mead with fermented with Malbec Grapes

This traditional style of sweet mead has a smooth honey taste and some light fruity overtones.

This sweet/still mead is made with Orange Blossom honey and was fermented and aged in a Bourbon Barrel. Full bodied and very sweet. Try this with peach cobbler.

There once was an old Belgian man who walked his donkey past a blueberry patch that was tended to by a beautiful maiden named Paige. Her blueberries were the juiciest in the land, which legend has it was due to her tending her patch in the nude. Every day as the old Belgian walked past the naked farmer with the fantastic berries, he was left with the most painful set of blue balls ever bestowed on a man. Brewed in the old man’s honor, we created a hefty 9% alc/vol Belgian wheat & rye concoction which features a squirt of the naked girl’s fresh organic blueberries from Serenbe Farms, giving Big Ol Belgian Blue Balls a slight taint of blueberry undertones to help him ease the pain. It’ll leave you lusting for more!

A traditional mead made with NJ wildflower honey. Strong honey on the nose and taste. Pours a nice blonde gold, mid semi-sweet with great floral and even some apple notes on the palette. Great mead for when you just want to drink real mead! Pairs great with pork, poultry, and anything with a citrus based sauces or desserts.

"This classic Belgian Triple was aged in oak wine barrels for two months and then bottle conditioned. Monkfish is the color of nectar, medium bodied, with a sweet malt flavor and subtle hop aroma. Phil says it’s good."

Chocolate Raspberry Mead

This is orange blossom sack mead and Tawny port blended with Elderflowers. It is medium sweet with a pleasantly floral finish.

Our decadent and delicious chocolate and vanilla mead The night is young and it’s just the two of you and this decadent bottle of mead. What to do? Well, here’s a little tidbit of knowledge. Mead, as well as chocolate, is known to be quite the aphrodisiac. Put those two together and who knows what you will be tempted to touch! Oh, little bottle, how I need you so much. A beast of a brew. This dark, rich hearty ale is made with shiitake mushrooms, adding umami soaked earthiness unique to this beer. Brewed with a balanced blend of roasted barley and oats, the mouthfeel is truly narrative. Both complex and straight-forward, this ale is equally at home with a hearty fresh off the grill steak or a late night game of poker.

Peach wildflower hydromel

We gathered all women on the production side as well as managerial staff across the company and brainstormed goals and style possibilities. With the addition of Springdale, our options were endless, but as a group, we decided to prominently feature the common thread linking the brews this year: the Pink Boots Hop Blend – a combination of Palisades®, Simcoe®, Citra®, Mosaic®, and Laurel® hops. This blend is spicy, fruity, and earthy, and in our minds really lent itself to a supremely drinkable, sessionable IPL. To stand out from the crowd and honor the society for which it was brewed, we made an addition of beet puree to color the beer a bright pink shade. On International Women’s Day, any woman employed by the company was invited to learn and participate in the brewing process. The Brewture is Female!

Starting with our beer farm well water, this beer is brewed in the spirit of colonial Brookeville. Using all Maryland barley, hops, and yeast while utilizing traditional methods of direct fire boiling and hand paddled mash.

This year’s Dogfather Imperial Stout will all be aged in charred bourbon barrels. Seven malt varieties and subtle hop additions give it a complex flavor profile.
