With the advent of white sugar after 1500 AD, honey bacame scarce in Europe, so apples were added to the mead to stretch the honey. Cyser was born! There are plenty of legends in the sage of mead wine. The story behind pyment is that when sugar made its way to Europe in the 15th century, honey became scarce. Grapes had migrated north with the Roman conquests. The shortage of honey created a need to stretch the honey. The newly available grapes were combined with honey and pyment was born. Hidden Legend Meadery’s pyment is a blend of red grape wine and honey wine crafted to commemorate this period of history.

We dropped a couple pounds of Michigan Montmorency cherries in while we were at it. This mead is light, tart, and refreshingly bubbly.

It is very difficult to brew a complex and balanced Belgian-style tripel ale, but we have made an attempt at brewing one anyway! Celebratory Belgian strong-style ale aged in a Minnesota oak barrel that previously housed honey wine.

We crafted “Laughing Buddha” to highlight the best qualities of the famous lager beers of Japan, China, India, Korea, Thailand, Vietnam, Cambodia, Singapore, and the Philippines. It is brewed with crystal malts and noble Saaz hops. In addition, we follow the Japanese ichiban shibori , or first press, method of brewing. When you drink Laughing Buddha, you know you are drinking fresh, hand crafted beer. Laughing Buddha can easily become your favorite beer, but will also pair well with sushi, seafood, and stir-fry dishes.

Pandan Ale represents a major advancement in Asian style beers. It is a complex brown ale brewed with crystal, chocolate, and honey malts. We have also given it a Southeast Asian flair by adding palm sugar and pandan , a nutty and fragrant leaf. Pandan, also known as bai toey (Thai) and lá dua (Vietnamese), is considered an essential ingredient to Southeast Asian rice dishes and cakes. This is a truly unique and flavorful beer that you will enjoy. Pandan Ale is a dark, full-bodied beer that will complement spicy Thai and Indian curries, as well as savory Filipino and Indonesian stews.

This mead is just fermented honey - no other flavors added. It gives you a soft slightly spicy character from the clover honey blended with a very smooth, soft alcohol and sweet, but not cloying, honey finish. 11% ABV.
