We really enjoy the opportunity to recreate old recipes from our early days as a brewery. Obsidian, originally known as Saison Noir when it was brewed back in 2013, was an idea our owner presented to showcase one of his favorite ingredients, honey. Using local, wildflower honey adds fermentables to bump up the ABV, lends floral character to the overall presence of the beer, and dries out significantly for a clean finish. We went a step further by using dark malt and a Saison yeast strain to add depth and complimentary spice. With this marriage of ingredients, we’ve crafted a unique combination of both individual flavors and overall complexity that truly shine in the finished product.
