New SOP hovers at the more temperate end of the DIPA spectrum. We’ve taken advantage of cutting edge Cryo Hop technology in order to dial up the flavor without maxing out the booziness. Cryo Hops are farm-fresh hops finished with a special cryogenic process that concentrates the resins and aromatic oils of the hop flower and filters out vegetal cone material. The result is a deeply layered palate of citrus and floral flavor with restrained bitterness. New SOP’s subtle underlying malt character supports its complex hoppiness without getting in the way of the flavor. This beer pours a beautifully clear golden color with a brilliant white sudsy head. New SOP is clean, smooth, and almost dangerously drinkable with a brisk, dry finish. Notes of tangerine, grapefruit, apricot, rose petals, and papaya give this delicious DIPA depth and intricate flavor.

This beer was dreamt up to be a summer refresher, perfect for relaxing in the sun. Fort George brewed the saison and Coopers Hall provided the Riesling. Co-fermented and aged in French oak barrels for 6 months, with a mixed culture consisting of wild saccharomyces, a few saison strains, over 14 different brettanomyces strains, and a couple of lactobacillus strains. the end result is a light funky aroma that leads into loads of fruit flavors like peach, green apple, pineapple, and melon, then finishes bright, dry, and crisp.

Matryoshka 2018 with Vanilla Beans

Matryoshka (the Russian name for nesting dolls) ages for almost a year in barrels, stacking layers upon layers of elegant complexity. This series begins with a strong Russian Imperial Stout which is transferred to barrels. The brewers then add layers of adjuncts, resulting in a progression of smaller and smaller variations.
