The war on pigeons has gone international. We suited up in Canadian tuxedos and headed north, equipped with traps baited by poutine and butter tarts. Irresistible food to the Canucks. That should work, eh? One by one the pigeons strutted into our traps, the plan worked perfectly. With the northern pigeon population greatly depleted, we made our way back into the lower forty-eight. While the surviving pigeons poured out some maple syrup for their homies, we brewed a batch of maple syrup pigeon porter for ours. Those hosers never stood a chance.

My Turn: Arturo

This beer was brewed by Arturo, Lakefront’s Sous Chef. He makes sure the right fires are lit, the wrong fires are put out, ingredients are fresh, and prepped food is at-the-ready. Arturo wanted an easy-drinking beer to share with friends while watching his favorite fútbol club (¡Força Barcelona alé!). Herbal and peppery aromas greet the nose from late Mt. Hood hop additions. Medianoche Reserve was one of those mistakes and this exclusive bottle of Mexican Medianoche is our atonement. To create Mexican Medianoche, we started with our base barrel-aged Imperial Stout, Medianoche, which is boiled overnight for over 14 hours, and aged it in Woodford Reserve® Rye Whiskey barrels for 20 months. The extended barrel aging contributed rich notes of vanilla, toffee, cocoa powder, sweet tobacco, and a subtle rye spice. Then we aged the finished beer on Papua New Guinea and Madagascar vanilla beans, Vietnamese cinnamon sticks and Ghanan cacao nibs to complement the flavors imparted from the barrel, resulting in one of the most complex and decadent beers we have ever produced.

Spaghetti Gose

For our own version of a #savorysour, we started with our base Gose, a kettle-soured Wheat Ale, but cut out the coriander and nearly doubled the sea salt. Then we added tomato puree to the fermenter along with fresh tomatoes from Bayberry Fresh LLC that we fire roasted in house, contributing just a hint of smoky sweetness. Finally, we dry herbed (that term probably won’t stick) the beer for nearly a week with fresh basil from Bayberry Fresh and oregano. The result is a 4.8% ABV kettle sour reminiscent of rich, robust spaghetti sauce, but still delicate, crisp, and surprisingly refreshing.
