Violent Femme

Historically the Saison beers were created to quench agricultural workers returning from the fields, very dry and light beers. Were disseminated in Wallonia at the turn of the 19th and 20th centuries, and were considered true "daily beers", produced in a very rustic, not to be sold but for own consumption. In the past, we have witnessed the flourishing of this global style (in the United States there are several Breweries produce beers of this type only), the Season has become gradually more and more alcoholic, laden with spices or ultra Hoppy. What has been lost sight of it was the origin of the Saison, why were invented and produced for centuries: their nature invigorating and refreshing. In memory of those I created the Violent Femme: a beer to drink with the body rather than the mind. Does not lend the side complicated ruminations or daring intellectual conjectures, is pure pleasure: charm, beauty and joie de vivre. Remember that summer, when I come home after a long day of work and the Sun is not yet set, often I allow myself a drink on the balcony while I watch the hills and the sky turns pink, red and orange in the hour of dusk. She is always with me in those moments: the violent woman that I tore my heart.

The VIÆMILIA was the first beer that I created, regarded by many as our flag maybe because it is also the most award-winning kellerpils in the world. Though it seems a simple "Lager", his work is perhaps the most delicate and long: changes nearly five weeks in the basement: a week for primary fermentation and ripening over three weeks at 3° C (cold lagering or maturation) during which a series of reactions occur that allow the young beer to be refined. In this time we add precious hop that flowers every year, to the first days of September, Let's select directly from the farmers of Tettnang (a small town in southern Germany renowned for the extraordinary quality of its aroma from hops). It is thanks to this practice (called dry-hopping) which VIÆMILIA expresses his floral and herbaceous scents. The name was an idea of Manuel that proved prescient. This beer is dedicated to our Earth, burdened by thick fogs in winter and parched by the Sun in the merciless summer noonS, the bolognese poet's verses helped me to describe the image of a languid day in June.
