Benediction

A Belgian abbey ale originated and brewed by Trappist monks. This high alcohol beer is bursting with flavor and fermented with the same unique yeast strain as the classic Belgian examples. Five hop strains are used and added to the boil kettle every 20 minutes. This brew is bursting with flavor yet surprisingly quaffable despite the high ABV but be careful! Imbibe too quickly and your session will be quite short! Brewed with Belgian pilsner malt and the finest pale Marris Otter malt from England, authentic Belgian candi sugar is added to the boil to increase the fermentable sugars to achieve the high alcohol content.

Benedictum (Mysterium Verum)

Benedictum was inspired by the brown ales of Flanders. Primary fermentation takes place in stainless with our house ale yeast before the beer is racked to barrels that have been inoculated with a mixed culture of wild yeast and bacteria. Once this secondary fermentation is complete, tart cherries are added to the barrels and allowed to referment, adding a further layer of complexity to this very drinkable sour ale. Our autumn seasonal is here. This is a farm-to-keg brown ale is brewed with locally-sourced candied pecans from the Berdoll Pecan Farm in Cedar Creek, TX . It’s made with a intricate blend of malts including Pale, Maris Otter, Crystal, and Carabrown to balance the pecans for a complex flavor and gorgeous reddish brown color. The Berdoll Brown Pecan Ale is a medium body brew with nutty, caramel, and chocolaty scents and no hop aroma. It has luscious flavors of candied Pecan, slightly roasty followed by a caramel malt finish with warming. It pairs well with roasted meats and hearty foods, including Uncle Billy’s brisket.

Beret

Beret is as artistic as those who wear its namesake cap. Our brewers developed a silky, full-bodied wheat ale which we began fermenting with a Belgian-style witbier yeast strain. To finish the fermentation, we added our collection of barnyard bacteria, intended to slowly sour the ale, bringing out a slight funk and refreshing piquancy. Finally, a small dose of pureed raspberries were added for just a hint of fruity tannins, putting the berry in Beret.

Actually, the ‘bergamot’ in our mead is called Scarlet Bee Balm. It’s native to eastern North America and grows right up the street from us at Jorgensen’s Organic farm in Westerville. The firecracker-red flowers are added to our central Ohio wildflower honey with tons of blueberries from Mansfield, Ohio. The result is a balance of berry and tea flavors with a barely sweet finish. If you can stop drinking it long enough to eat… try light, creamy cheeses or along side a fresh lemon sorbet.
