Berliner Weisse

Berliner Weisses are light, slightly sour German style wheat ales. When Napoleon’s troops occupied Germany, they called them “Champagne of The North,” but some Germans call them the workers’ sparkling wine. This beer is the perfect refresher for a warm summer day. We used 50% wheat and 50% barley to make this beer. The sourness comes from a partial fermentation with lactobacillus bacteria. We then finish fermentation with our house ale yeast. You can expect a lemony aroma and tartness from this beer and a touch of wheatiness in the background. It truly is sparkling lemonade. It is unfiltered, so it will be slightly cloudy.

Berliner Weisse is a top-fermented, bottle conditioned wheat beer made with both traditional warm-fermenting yeasts and lactobacillus culture. They have a rapidly vanishing head and a clear, pale golden straw-coloured appearance. The taste is refreshing, tart, sour and acidic, with a lemony-citric fruit sharpness and almost no hop bitterness. Served in wide bulbous stemmed glasses, tourists in Berlin will often order on as a "Berliner Weisse mit Schuss: Himbeere" or "Berliner Weisse mit Schuss: Waldmeister". These are syrups that are added to make the sourness more palatable. Himbeere is raspberry (red) and Waldmeister is woodruff (green).

A dark brown ale loaded with tasty caramel, toffee and a slight hint of roasted malts. This collaboration beer was fermented with a British ale yeast strain which typically leaves a pleasant malty flavor after fermentation. Part of the whole idea behind brewing together was to find a local or native ingredient that would be fun and interesting to add to a beer. Riberries or Lilly Pilly fruits were chosen for their their slight tartness and notes of cinnamon and clove.
