Made with five pounds per barrel of Falconer’s Flight and Centennial hops, this beer is Grimm’s first proper hop bomb: first-wort hopped, hop bursted, and double dry hopped for all you lupulus freaks. Of course that wasn’t enough, so we fermented it with the “clean” Orval yeast strain to put it over the top.

We salute those who came before us with a new twist on a Germanic style that we hope will make the Bier Barons of old proud. Prosit! This Bavarian IPA is pale orange in color with copper highlights. The aromas are slightly woody and spicy from the prodigious amounts of German noble hops. The malt character is slightly bready or nutty to start with a fruity yeast ester character and dry, bitter finish.

Our Biere de Chocolat celebrates the long and lauded history of chocolate production in San Francisco. Our aim was to create a beer bursting with cocoa flavors and aromas, balancing sweet and savory to create a complex but quaffable chocolate brew. To accomplish this we partnered with Dandelion Chocolate in San Francisco to create this rich brew brimming with chocolate character. Working with the unique flavors of Dandelion’s single-source beans, we created this decadent beer by layering in smoked and dark-roasted malts with citrusy Ivanhoe hops from Clearlake, CA. Finally, we added a blend of hand-roasted cocoa beans sourced from Madagascar and Río Caribe, Venezuela. The Madagascar beans add bright berry-cocoa flavors, while the Río Caribe adds dark chocolate and bourbon notes. A touch of vanilla rounds out the supporting flavors to create an eminently drinkable beer that is a chocolate lover’s beer through and through.

I love this beer! A nod to both Belgian and American brewers Biere De Crème is an inspired Cream Ale. Here in Athens Ohio springtime is beautiful. The weather is fantastic, young spirited students are out and about and everybody is looking for an easy drinking beer with that same playful feeling, Biere de Crème is that brew. Traditionally American brewers would add a portion of corn to lighten up the body in cream ales. I choose to take this a different direction by adding clear Belgian candied syrup. Belgian and American malts help add soft nuances culminating into a very unique beer that is a delight to quaff.
