Blind Salamander

Blind Salamander Pale Ale is the first of a series of Rahr beers called Rare Breed. These beers are dedicated to improving the lot of endangered Texas species. Rahr is making donations from these proceeds to the Texas Parks & Wildlife Foundation to help with the recovery of these species. The Texas Blind Salamander is a rare cave-dwelling troglobite amphibian native to San Marcos, specifically the San Marcos Pool in the Edwards Aquifer. It has bright red external gills for absorbing oxygen from the water. Its mature length is 5 cm and its diet varies by what flows into its cave, including shrimp, snails and amphipods.

This is the sort of beer where study and contemplation is essential, or if you’re hungry, why not try it with chicken jalfrezi or lamb tagine? Rich roasted stone fruit is added to the end of the boil, not the fermentation, giving a big round fruit character but not too much sweetness. This summer specialty is made with fifty percent malted wheat for a clean, light, refreshing character, plus a special Bavarian yeast that creates the classic cloudy appearance and banana, clove, and lemon character. To decant from the bottle, pour three-quarters of the bottle into a glass and gently shake the remaining contents to mix the yeast back into the beer and then top off your glass. Delicious with a slice of lemon but we prefer it au natural.

Blissful Ignorance #1

Batch #1 starts with a single 2-row pale malt to let the hops shine. We brewed this one with copious amounts of El Dorado & Meridian hops, and then dry-hopped it twice for over 5 lbs per barrel of total hops. This one finishes very dry, letting the hops punch you in the mouth. But, watch out! It's a smooth drinker at 9% ABV and will catch up to you quick! Flavor and aroma notes are of tropical fruits like mango, along with watermelon and stone fruits. There is just enough biscuity malt sweetness to carry the beer, but the hops are the main event on this one.

Fresh for the holidays, and named after our favorite (and sure to be inebriated reindeer), we cooked up a batch of IPA but with a twist. Consider this the festivus of beers. Following our tradition of Belgian Christmas beers, we created an amber colored IPA with a bitter backbone and smooth finish. Using a modest dry hop of NZ Motueka (a Belgian Saaz cross-breed), the mellow hop character perfectly harmonizes with a delicate Belgian yeast character thanks to the Westmalle strain (of Little Sumpin’ Wild lore). The malt bill uses Pale Malt, Crystal, and Dextrine to allow the yeast to come through; and at 8%, it packs a punch. Its really the perfect beer to sip on while you snuggle up in a Forever Lazy and chill by the fireplace.

Bottle Conditioned Imperial Saison When this unconventional holiday beer won gold last year at the Canadian Brewing Awards, we decided to make it a seasonal tradition. The 2012 version resembled a Christmas orange, with additions of toasted clove, tangerine zest, and kafir lime leaf – this year we’re doing something a bit different… Though it beholds no actual hallucinogenic properties, we do hope the 2013 version will give you visions of sugar plums dancing in your head. A strong, fruity, belgian-style trippel 8.5% alc./vol. Our aptly named Christmas Ale is based on the strong beers traditionally brewed by Belgium's trappist monasteries. Trippel is typically at least 8% alc./vol. and has a light golden colour. Because of its high strength this beer has an intensely fruity palate. Up front it has a honeyish sweetness but the finish is dry and champagne-like. Most weary Christmas shoppers would be well advised to benefit from the warmth and 'ho-ho-ho factor' that only a beer of the Biltzen's calibre can provide.

Blitzkrieg Hops Double IPA

With the amount of IPAs brewed here in the States you’d think that there’s only one way to skin a cat. While the West Coast style has long dominated the style, there’s a world of IPAs you should explore, and Blitzkrieg Hops DIPA wouldn’t be a bad start. Blitzkrieg is a big, 9% ABV, juicy, earthy hopped English-style double IPA brewed entirely with English malts, hops, and fermented with an English ale yeast strain. Brewed with Maris Otter pale malt, and hopped with Admiral, Pilgrim, Phoenix, and Target hops; all big, juicy, high alpha English hops that we thought needed a lil’ love, each of which is over 10% alpha acid. Blitzkrieg Hops DIPA is our homage to the birthplace of the IPA as well as the band that inspired its name.
