Cole Porter

The line between a brewer’s porter and stout is often fuzzy. Porter is always the lighter of the two, and relies less on the darkest, highest-kilned barley known as “roast barley”. Instead it gets most of its dark malt character from malts known as chocolate and black. Robust porters tend toward the hoppy. Cole Porter uses only a touch of roast for depth and complexity while caramel and chocolate notes slug it out with a higher-than-usual hop character at the forefront of the flavor profile. So-called English porters are softer than this one, behaving more like a dark version of a brown ale.

Collaboration No. 1 - Imperial Pilsner

For this inaugural installment of collaboration brews, we invited distinguished Belgian brewer Jean-Marie Rock to join our own Steven Pauwels for a zymological alliance. The two conspired to revive a recipe from the very beginning of Rock’s career, the memory of which he has cherished for more than 30 years. A starkly simple recipe combined with a painstakingly complex brewing process produce an Imperial Pilsner of subtle elegance and delicately balanced contrasts. First wort hopping, a very old technique in which hops normally added late in the boil are put in at the beginning, and allowed to steep for a much longer time, gives the beer an especially refined hop aroma and flavor. The 100% Pilsner malt makes a clear, yet restrained statement, answered by a stead, harmonious chorus of Saaz hop bitterness, echoes of which linger in the dry, crisp finish.

Collaboration No. 2 - White IPA

Combining Boulevard’s expertise at making Belgian-style witbiers with Deschutes’ skill at brewing hop-forward ales, this beer puts a new spin on the idea of collaborative brewing. Working from a single recipe, brewmasters Steven Pauwels of Boulevard and Larry Sidor of Deschutes have produced two separate beers, more than 1,600 miles apart. Despite the beer’s shared recipe, each of the two versions possess a unique identity, reflected in their naming and packaging. Boulevard’s half of the equation, christened Collaboration #2, is available throughout our selling region in both 750mL bottles and in kegs. Brewed at their Bend, Oregon facility, Deschutes’ effort is the second beer in their new Conflux collaboration series, and is available throughout their selling region in kegs and 22-ounce bottles.

Collaboration No. 3 - Stingo

Collaboration #3 Stingo was brewed using traditional English ingredients. A variety of ale and specialty malts from Yorkshire are at the forefront; their pronounced roasty aroma and flavor contain hints of toffee, cocoa and bread crust. English hop varieties contribute subtle herbal, peppery qualities. The beer was brewed in batches; some was fermented on oak, some was fermented normally, and some was allowed to sour in the mash tun before being transferred to a fermenter. Boulevard’s brewers, along with Dann and Martha Paquette of Pretty Things Beer & Ale Project, then blended the batches until desired levels of wood and tartness were achieved for the final product.

Collaboration No. 4 - Saison celebrates our partnership with Duvel Moortgat and our mutual respect for the brewers of Ommegang. A base of pale malt, corn, oats, rye and wheat is spiced with coriander, orange and lemon peel, and grains of paradise. The resulting wort is fermented separately with the house Belgian yeast of each brewery to allow the character of each yeast to shine. The final beers were blended before packaging.

Collaboration not Litigation Ale

Salvation. The name of two intricate Belgian-style ales, created by us, Vinnie Cilurzo of Russian River Brewing and Adam Avery of Avery Brewing. After becoming friends a few years ago, we realized we both had a Salvation in our lineups. Was it going to be a problem? Should one of us relinquish the name rights? “Hell, no!” we said. In fact, it was quickly decided that we should blend the brews to catch the best qualities of each and create an even more complex and rich libation. In April 2004, in a top secret meeting at Russian River Brewing (well, actually it was packed in the pub and many were looking over our shoulders wondering what the hell was going on), we came up with the perfect blend of the two Salvations. Natalie, Vinnie’s much more significant other, exclaimed, “We should call this Collaboration, not Litigation Ale!” “Perfect,” we shouted! We celebrated deep into the night (or is that morning?). Fast forward to November 14, 2006. After talking about it for over two years, we finally decided to pull the trigger and Vinnie made the journey to Avery Brewing to brew his Salvation exactly as he does in his brewery.

We brewed this Saison-style ale with our friends at the newly opened brewery, Bottle Logic, located just down the street from our sour barrel warehouse. Being just as interested in style bending beers as we are, this not-so-logical beer was born. The base beer is a Belgian-style farmhouse Saison, fermented with brettanomyces, but that's just where the fun begins. Our teams selected an unusual set of herbs to brew the beer with and then added as much raspberry and mango puree as we could fit into our fermenters. The result is a tropical Saison that is perfectly refreshing during this unusually warm California winter.

Collective Distortion IPA

In bringing together artisans from disparate aural planes, one might expect an offbeat, feedback-warped cacophony, shrill to the point of unlistenable. Yet, by inviting Kyle Hollingsworth, keyboardist for eclectic, jam-prone sextet, The String Cheese Incident, and Keri Kelli, wailing rock guitarist of Alice Cooper fame, we were able to make truly beautiful music. Turns out, these musicians have a great deal in common, both with each other and with Stone. We all enjoy turning things up to 11, and that is represented in this collaborative offering, an imperial India pale ale ably backed by Nugget, Comet and Calypso hops, and amplified care of a healthy dry-hopping with Vic's Secret, a new Australian hop, adding citrus and tropical fruit oomph. To give this modern masterpiece some soulful, classic character, we traced the roots of brewing to the days when Old World herbs were used to spice beers, adding in coriander and, a first for us, elderberries. To stand up to that sumptuous spice and blaring bitterness, we added golden naked oats, which are lightly roasted and add body and enhanced mouthfeel to the brew like a steady, unbreakable backbeat to an incendiary jam solo. Sit back, crank the volume and get lost in this operatic incarnation of genres combined in the name of invention.

Our Colonial Common is brewed with 100% Northern Brewer Leaf hops for bittering, flavor, and aroma. We hopped this beer to a moderate level and used a basic malt profile for the backbone of the beer allowing the hop characteristics to come through. The hops lend this to be a nice, refreshing beer and woody notes are present. However, we also get mint notes that we have never identified in a beer before, even in other commercial examples. See if you agree, or if it’s just the power of suggestion.
