CONDEMNATION

Brewed in collaboration with Hailstorm Brewing out of Tinley Park, we added a few handfuls of golden raisins and apricots to this clean, lightly sweetened Belgian Golden Strong Ale to give it a bit of a stone fruit essence. With a malt backing consisting of mostly Belgian pilsner malt, this beer is higher in alcohol, but goes down devilishly smooth. Very strong disapproval need not apply here.

CONDOR PILSNER

A traditional Unfiltered German Pilsner. Keller means cellar in German thus denoting that this beer is left unfiltered. This lager is fairly dry and was made with 100% German Pilsner malt and hopped with German Aurora and Czech Saaz. The Saaz gives this beer a slightly spicy aroma and a clean bitterness. German pilsners are hoppier than its American counterparts. (Bud, Miller, Coors etc.)

Confidence

Confidence is our hoppy red ale. It was brewed as a tribute to Kung Fu San Soo Grand Master Jimmy H. Woo whose motto was “You can take my life but not my confidence.” I was very fortunate to be trained by first generation Master Chuck Cory who instilled that confidence in me. I designed this red ale in respect of his red master characters. Without his influence and the positive encouragement of my family I would not have had the confidence (or insanity?!) to chase my dreams around the world. The beer has a bold ruby colour. The malt character is quite strong, with generous helpings of toffee, which is overlayed with a bitter and citric hop hit. This beer slides effortlessly past your defenses and assaults your mouth with flavour, leaving you overwhelmed. The red colour and warming character make it perfect for autumn drinking, so we try to release it around that time annually.

Confluence Ale

Allagash Confluence Ale is created with a mixed fermentation; utilizing our house primary Belgian style yeast in combination with our proprietary Brettanomyces strain. The two yeast strains work in tandem creating a marriage between spice and fruit flavors that ultimately leave a lingering silky mouth feel. Confluence is brewed with a blend of both imported pilsner and domestic pale malts as well as a portion of caramel malt, resulting in a complex malty profile. Tettnang and East Kent Golding hops are added in the brew process to balance the intricate malty profile while adding a sweet and spicy citrus aroma. After fermentation, Confluence undergoes a lengthy aging process in stainless steel tanks to enhance the flavors. Prior to bottling, it is dry hopped with a Glacier hops, providing a pleasant balance of aromas. Confluence is then bottle conditioned and aged in our cellar prior to release.

Confounded Mr. Sisyphus

We brewed this beer as a single batch in 2009, our first full year of brewing. We only brewed it once, then we decided not to do it again. It’s hard to say why, except it seemed like the right thing to do. Maybe we’ll make it again one day. Anyway, for the sake of history, here is our description: Confounded Mr. Sisyphus is a subtle beer, full of yeast, bacteria, leafy hops and grains. Mr. Sisyphus’s roots are Vienna-style lager malts, which give a golden orange colour and a malty nuttiness. Light esters and phenols from four strains of yeast give fragrance, and a malolactic bacteria has softened the acidity during conditioning and will continue to do so in the bottle. At his extremities you’ll find herbal German Hallertau and American Crystal hops, like leaves basking in the sun. Finally come Balaton cherries, with their spicy, musty, earthy character. This is a beer to drink at sunset, be it in the quietness of a darkening forest or with the stillness of the city surrounding you. We even wrote Mr.S his own bedtime story… “A gentle breeze blew through the forest. The leaves fluttered, and the ripe cherries on the Sisyphus tree bumped against one another. Then all was still. A tiny, contented sigh then came. It would only have been audible to a bird close by, or perhaps a child standing amongst the blossoms near the ground. But a sigh it was, and a most extraordinary sigh, for it came from Mr. Sisyphus. If you stand at the bottom of the Sisyphus tree, close in beside the trunk where leaves surround you, and gaze up into its depths, you might notice that amongst all the cherries hanging there, one is not quite the same as all the others. Perhaps you will notice a tiny foot, a twig-like hand, or even, if your crane your neck, an eyeball twinkling there amongst the hanging balls of fruit. Unpluckable, never picked by hand, nor pecked by bird, nor pitted and preserved in a pie. Never to fall gently and bounce on soft moss, to be planted and grow again. For there hangs Mr. Sisyphus, the cherry who cannot fall.”

After a lengthy fermentation process, we package this beer in the bottle, fasten it with a cork and cage and let it naturally condition.
