Brewed in collaboration with Hailstorm Brewing out of Tinley Park, we added a few handfuls of golden raisins and apricots to this clean, lightly sweetened Belgian Golden Strong Ale to give it a bit of a stone fruit essence. With a malt backing consisting of mostly Belgian pilsner malt, this beer is higher in alcohol, but goes down devilishly smooth. Very strong disapproval need not apply here.

A traditional Unfiltered German Pilsner. Keller means cellar in German thus denoting that this beer is left unfiltered. This lager is fairly dry and was made with 100% German Pilsner malt and hopped with German Aurora and Czech Saaz. The Saaz gives this beer a slightly spicy aroma and a clean bitterness. German pilsners are hoppier than its American counterparts. (Bud, Miller, Coors etc.)

This harmonious imperial IPA is composed with precision and rye. Malts make early overtures, and experimental hops arrive right on time, conveying an elegant bitterness that promptly departs again.

Our most heavily hopped beer with 2 lbs per barrel. An Imperial IPA with a spicy and piney hop flavor and aroma.

’Cone Crusher’ our 8.6% IPA is bursting with overwhelming amounts of citrusy Amarillo hops. This IPA showcases tropical fruit overtones of orange and mango, while being backed by a pleasing earthiness to make for a crushable beer.

Our single hop wheat IPA, brewed with all Citra hops. Lighter in color and lower in a.b.v. than a typical American IPA, this beer has just the right amount of hop flavor and aroma. Completely satisfyingly awesome in its crispiness and well-rounded hopaliciousness. This beer might just be your Rushmore.

Confidence is our hoppy red ale. It was brewed as a tribute to Kung Fu San Soo Grand Master Jimmy H. Woo whose motto was “You can take my life but not my confidence.” I was very fortunate to be trained by first generation Master Chuck Cory who instilled that confidence in me. I designed this red ale in respect of his red master characters. Without his influence and the positive encouragement of my family I would not have had the confidence (or insanity?!) to chase my dreams around the world. The beer has a bold ruby colour. The malt character is quite strong, with generous helpings of toffee, which is overlayed with a bitter and citric hop hit. This beer slides effortlessly past your defenses and assaults your mouth with flavour, leaving you overwhelmed. The red colour and warming character make it perfect for autumn drinking, so we try to release it around that time annually.

Allagash Confluence Ale is created with a mixed fermentation; utilizing our house primary Belgian style yeast in combination with our proprietary Brettanomyces strain. The two yeast strains work in tandem creating a marriage between spice and fruit flavors that ultimately leave a lingering silky mouth feel. Confluence is brewed with a blend of both imported pilsner and domestic pale malts as well as a portion of caramel malt, resulting in a complex malty profile. Tettnang and East Kent Golding hops are added in the brew process to balance the intricate malty profile while adding a sweet and spicy citrus aroma. After fermentation, Confluence undergoes a lengthy aging process in stainless steel tanks to enhance the flavors. Prior to bottling, it is dry hopped with a Glacier hops, providing a pleasant balance of aromas. Confluence is then bottle conditioned and aged in our cellar prior to release.

We brewed this beer as a single batch in 2009, our first full year of brewing. We only brewed it once, then we decided not to do it again. It’s hard to say why, except it seemed like the right thing to do. Maybe we’ll make it again one day. Anyway, for the sake of history, here is our description: Confounded Mr. Sisyphus is a subtle beer, full of yeast, bacteria, leafy hops and grains. Mr. Sisyphus’s roots are Vienna-style lager malts, which give a golden orange colour and a malty nuttiness. Light esters and phenols from four strains of yeast give fragrance, and a malolactic bacteria has softened the acidity during conditioning and will continue to do so in the bottle. At his extremities you’ll find herbal German Hallertau and American Crystal hops, like leaves basking in the sun. Finally come Balaton cherries, with their spicy, musty, earthy character. This is a beer to drink at sunset, be it in the quietness of a darkening forest or with the stillness of the city surrounding you. We even wrote Mr.S his own bedtime story… “A gentle breeze blew through the forest. The leaves fluttered, and the ripe cherries on the Sisyphus tree bumped against one another. Then all was still. A tiny, contented sigh then came. It would only have been audible to a bird close by, or perhaps a child standing amongst the blossoms near the ground. But a sigh it was, and a most extraordinary sigh, for it came from Mr. Sisyphus. If you stand at the bottom of the Sisyphus tree, close in beside the trunk where leaves surround you, and gaze up into its depths, you might notice that amongst all the cherries hanging there, one is not quite the same as all the others. Perhaps you will notice a tiny foot, a twig-like hand, or even, if your crane your neck, an eyeball twinkling there amongst the hanging balls of fruit. Unpluckable, never picked by hand, nor pecked by bird, nor pitted and preserved in a pie. Never to fall gently and bounce on soft moss, to be planted and grow again. For there hangs Mr. Sisyphus, the cherry who cannot fall.”

Conga is Revival Brewings first imperial IPA. Made with extra pale malt, white wheat, white rye, light Munich and crystal malts. Seven different hop addiditions were made in this recipe and a total of 30 lbs. of dry hops were used. Crisp, floral, citrusy and extremely boozy.

This is an English Style Mild that has a rich copper color and a quaint floral nose. Light in body, very sessionable with toasted and biscuit malt flavors. Conger’s has just enough bitterness to keep it from being sweet.

Our Winter installment of the Portland Pale Project earns its name from its crisp hint of pine, a result of the hop combo we used. With our Pale Ale pub series, we strive to show the possibilities of this beer style and the Coniferous is a great example of breaking that traditional Pale mold. Even its coloring surprises drinkers, which is a beautiful rich shade of copper. It also packs some hoppiness, which is balanced by a sweet ‘n’ fruity malt backbone. The Coniferous is anything but boring.

This ale would have been at home on the banquet tables of the High King of Ireland – Conn of the Hundred Battles. Legend says a mysterious woman with a chalice of red ale marked Conn’s ascension to the unified throne of Ireland. If that really was the case then this ale truly is fit for a king! Aromas of biscuit hover over the creamy mocha-colored head and caramel red body of this celebration ale. On first sip, this beer is reminiscent of a barley wine style with its huge malt profile. The rich toffee notes and perfect carbonation create a velvety mouth feel that satisfies to the bottom of the glass. Sláinte na bhfear agus go maire na mná go deo! This beer is a traditional Irish Red Ale inspired by the savage beauty of western Ireland and its friendly people. It has a deep amber, ruby color and a rich, smooth malt character. Notes of caramel and toasted malt persist. Tales of appearances of fairies and leprechauns abound in the mountains of the Connemara, so who knows what will happen after enjoying a pint of this magical brew.

An intense malty, single hopped nut brown ale with an explosion of toffee and liquorice flavours and a sweet, malty aroma.

Collaboration with Cigar City Brewing. Well balanced tropical notes and a hint of stone fruit. Very mild bitterness on the finish. Well done!

The fierce qualities of some of Florida’s earliest explorers are represented with our flavorful Conquistador Dopplebock. With a high ABV - over 7% - our brew is as strong as the Spanish that conquered much of our coast. After one or two, you might start calling yourself Don Jose and looking for a helmet. The conquistadors were searching for treasure in Florida: gold, silver, the secret of immortality. While we can’t guarantee you’ll find gold at the bottom of a pint, maybe there’s a drop from the Fountain of Youth. And we’re not telling where it is. Take home a growler, enjoy a pint - the Conquistador Dopplebock will make the weakest men ready to sail across the sea.

Our seasonal Milk Stout aged for one year in port barrels with ancho and guajillo chilies. Yahoo!
