We took a crisp, light-bodied cherry ale and hid it away in oak barrels that have held both bourbon and maple syrup. After a lengthy stint, it emerged a changed beer, blanketed in notes of warm vanilla and earthy sweetness. The wood proves itself the star of this beer, adding depth and taming the tart cherry while the maple imposes a velvety texture that lingers for not a moment too long.

Frosted Fields Winter Wheat

Frosted Fields was created to celebrate those cold Winter days when the frost lays heavy across the fields. In addition to the usual 2-row malted barley Frosted Fields uses a blend of white and red wheat malt. If we could put this one in a category, it would best fit the double-wit style, but has the addition of high alpha Summit hops to enhance the bitteness and flavor. The citrus flavors of the corriander and the sweet and bitter orange touch on the times when we sit warm inside munching on nuts and some fresh citrus fruits to take the edge off the cold outside. We will be tapping the first keg on New Year's Eve at the brewery and it will then be available in Pint Cans, Growlers and Kegs.

Built in 1871, the current La Dolce Vita restaurant in Lemont was once home to The Charles Fruhauf Store. Charles Fruhauf, a German-born immigrant, built his storefront out of Lemont limestone (Athens Marble) and his general store was a Lemont staple throughout the late 1800’s. We brewed this Oktoberfest as homage to him and the beautiful building that still stands to this day. Clean, malty, and just dry enough, this Märzen-style lager is to be consumed in your finest lederhosen or dirndl while eating giant pretzels in an endless beer garden.

Fruhbock

Frueh Bock (pron. "Froo Bock") - Literally "Early" Bock, Frueh is also short for Fruehling which is the German word for Spring. This deep golden Bock lager is malty sweet with a touch of fruity, almost citrusy notes that linger on the palate. And although this Helles Bock/Maibock-style beer has a higher alcohol content, it is not at all obvious to the taste. More than a month of lagering results in a very smooth character. Fruit Lambics

These authentic Belgian-style ales are intensely sour, dry and complex. All three of the lambics - Raspberry, Blackberry and Black Cherry - are aged in oak casks for more than one year. 15 kg, give or take, of whole unpasteurized fruit is added to each 200 litre oak barrel of fermented beer. The naturally occurring wild yeasts cause a second, slow fermentation, breaking down the fruit sugars to total dryness.
