Honey Sun Mead - African Birds Eye Chili

This mead is somewhat of a shock to the senses. African Birds Eye Chilli or Habanero Chilli lends an interesting wooded nose to the mead, which is entirely overwhelmed by the first sip, which clears the sinuses in a way similar to that of eating half a cup of Wassabi with a sushi roll. This mead is best served as an ice breaker at dinner parties, especially if the food will be hot. It is also quite amusing later on in a dinner party to circulate a bottle of Chilli mead when some of the guests become competitive.

Honey Sun Mead - Dry

Best served chilled with game, red meats and curries. A sociable after dinner drink that will assist the consumer in solving the worlds problems (in theory)!

Honey Sun Mead - Herbal

A semi sweet mead with rooibos, honeybush tea, cinnamon and apple. The herbs provide a smooth structure to the mead with a lingering honey aftertaste. Ideally served at 12-14 degrees Celsius, in a large red wine glass to allow development of the nose. A good stand alone sundowner, a well matched partner to spicy dishes and stir fries, game and poultry and a companion to desserts and coffees.

Honey Wheat

This American style unfiltered wheat beer is great anytime. The aroma is pleasantly grainy and sweet with a touch of honey. The appearance is pale yellow with minimal clarity. The flavor is not overpowering, and is quite quaffable. Honey Wheat has a low hop bitterness that is balanced out by the honey malt used in the mash. The mouth feel is smooth and crisp, and has medium to high carbonation. This beer is always a refreshing treat, and is available at our brewery year round.

A few years ago, my family started a small bee-keeping operation which yields a sweet reward of delicious honey every year. This springtime brew is just right for the season- not too heavy and not too sweet. The honey adds a slight depth with notes of orange, clover, and wild honeys.

Honeydew

Saison fermented with freshly juiced honeydew melons. Sink your teeth into the sweet flesh of a honeydew melon, and you know that summer’s just around the corner. Our hoppy saison, Honeydew, is an honor to such refreshing experiences. Aromas of Belgian spice and honeysuckle lead into a dry, peppery flavor that hints at sugar cane, pine, and fresh, ripe melon. Sip it at the picnic table, by the lake, on the porch, or wherever the good weather takes you.

Honing Liefde

This is a beer that we collaborated with some of our Founders club members. We started with a Blonde recipe, however when we added fig and dark candi syrups to the beer, it went from blonde to red. Hence the name of a blonde with dark roots. Grain bill is pilsner, aromatic, honey, and white wheat malts. Bittered with Saaz hops, flavor and aroma additions are from home grown hops of varying varieties from one of our founder member's farm.
