Single malt (UK Maris Otter), single hop (NZ Nelson Sauvin) beer named after Horatio, Admiral Lord Nelson, victor of the Battle of Trafalgar in 1805. Nelson had one eye & one arm so a single malt and hop beer seemed appropriate. NZ Nelson Sauvin comes from the same area of New Zealand as the great NZ Sauvignon Blanc wines and the hop has a similar minerally, gooseberry taste. We accentuated this with liberal "Burtonization" of our brewing water, and added hops primarily for flavor rather than bitterness or aroma, partway through our whirlpool stage. The light color continues the fine white wine parallel. We think this is an IPA for grown-ups - hemp/weed obsessives might be disappointed but there’s an awful lot of West Coast IPA to which they’re entirely, eternally welcome.
